Sometimes… you get a wild idea and you just have to go with it. This Skinny Strawberry Pop-Tart Cobbler was definitely one such idea. I had come across a fun idea for a strawberry pop-tart pie, but.. to be completely honest with you, homemade pie crust scares me. So, I started to think back to this summer when I made a few delicious and easy cobblers. Then BOOM lightening struck and the world made sense.

Farmers' Market Cornbread

While it’s chilly here in Texas, you better believe that I’m taking FULL advantage of it. Which is why tonight I’m making a special sort of soup tonight and this awesome Farmers’ Market Cornbread to go along with it!

Oh. My. Gosh. This Dark Chocolate 'Crazy Cake' is delicious, y’all! The first time I heard about ‘wacky cake’, I was more than a little skeptical. How can you make a good cake with no butter, eggs, or milk?! Well, as it turns out, there’s a couple of secrets to this cake that make it perfectly fluffy and delicious! In fact, it’s one of my favorite cakes. One of these simple swaps is using Mazola® Corn Oil in place of another oil or butter. I’ve been cooking and baking a lot more lately with corn oil. Fall Breakfast Quinoa Bowl

It’s been unusually cold here in Austin, Texas lately. Generally speaking, we don’t get the first ‘cooler’ bits of weather until Halloween. But, this year we’ve already been in the 40’s - which is completely fine with me. I love Fall weather and I am always more than thrilled to get anything below 80 in October. It means that I get to use my oven and stove again without regret!

With it being cooler, overcast, and raining off and on, I thought it was high time for a nice warm hearty breakfast. And that’s exactly what this Fall power bowl is all about! Roasted Tomato Soup

There is one thing for sure, no one is ever too old to enjoy tomato soup! One of my best memories growing up, had to have been the simple and easy dinner my mom would make on cold Fall or winter days… and that was a grilled cheese and tomato soup. Of course, even though you won’t grow out of tomato soup, your tastes do change. So today, I’ve elevated the classic and my favorite.
