Taco Salad Splits

It’s cold outside! It’s so cold and frosty that school was delayed, and while it’s cold and not much else to do, my creative juices always kick into high gear. Today I decided to make some cute Taco Salad Splits with the bonus time that I had gifted to me by the weather.

So what’s a Taco Salad Split? Well, it’s a taco take on a banana split. Don’t worry, I’m not making tacos with bananas. But I am making these taco salads LOOK like banana splits.

Healthified Oatmeal Raisin Cookies

One of the first swaps I made was to use a whole wheat white flour. Why? I wanted to get the whole wheat in there without the ‘grit’ of whole wheat flour. I also subbed in a brown sugar/sweetener blend instead of full on brown sugar. This cut down the sugar on these cookies immensely.

Other than that, these cookies are really pretty standard. Oats, raisins, and some spices.

These cookies do take some time, but that’s only because the dough needs to chill for at least an hour in the fridge to avoid the dough spreading out too much when baking…

Whole Wheat Vegan Biscuits

Baby it’s cold outside…

And I need some biscuits in my life! Now, I’ve made some simple biscuits in the past, like my 3 ingredient biscuits or even these low carb ones that I paired with gravy. Today though, I wanted to stay simple and have some biscuits on hand for breakfast sandwiches this week. I didn’t want just any old biscuit though, I wanted them to be whole wheat this time around!

As the Holidays draw ever closer, I’m always inclined to start thinking about casseroles. Especially when it comes to breakfast. I like to have something I can toss together quickly (or even the night before) so that I can serve up a group of people without breaking a sweat.

Skinny Baked 'Overnight' Vanilla Chai Oatmeal

This Skinny Baked 'Overnight' Vanilla Chai Oatmeal is based off of my Baked Amish Overnight Oatmeal, but made with plenty of added chai spice! The spice blend is homemade with spices that you likely already have on hand. It’s quick and easy to put together in the evening to have ready to go for baking up first thing in the morning.

Unlike a ‘bowl of oatmeal’ baked oatmeal is a bit more akin to cake. It’s fluffy and is generally cut or scooped to be served in a bowl where it’s topped with milk and any fresh fruits desired. Since this oatmeal likes to soak overnight, that makes this a great Sunday night breakfast to put together and have ready to go to toss in the oven on Monday for a weeks worth (plus) of breakfast!…
