Shepherd's Pie Stuffed Twice Baked Potatoes

Sometimes it’s okay to play with your food. I for one, love to play with mine. I like to put fun twists on classics. Shepherd’s pie is one of my family favorites, especially as we roll into March and get in closer to St. Patricks’s Day. These Shepherd's Pie Stuffed Twice Baked Potatoes are based on a couple of my favorite traditional recipes that were merged together.

One Pot Irish Potato Leek Soup

It’s been pretty cold and yucky here for the past few days and a nice rich bowl of some potato soup just sounded like the absolute perfect thing for dinner. A few weeks back my brother tried his hand at making a potato leek soup for dinner, and while it was good, there were a few tweaks that I wanted to make. Having two cooks in one house is a blessing and a curse.

Now that Valentine’s day is over, we can move onto the next holiday on the list. St. Patrick’s Day! I say it every year, St. Patrick’s Day is one of my top three holidays. Partly because I’m Irish and partly because it’s my dad’s birthday! Being as my little one strangely loves corned beef, I decided to make some WELL ahead of time, and honestly I’m not sure why I don’t make it more often through the year.

Being as I’m a Irish girl, leading into the month of March is one of my favorite times of year. The weather usually starts warming up and I get to play around a lot more with Irish staples! While it’s cold enough outside for a few more months, I’m planning on doing a lot more baking and using up precious oven time while I can.
