Yep, still over here trying to eat less meat. The more delicious vegetarian options that I can come up with at this point, the better. And this Chickpea & Spinach Curry is so quick, easy, and tasty that it may just have to go into the weekly rotation.

This curry is made all in one pan, making it perfect for easy clean up on a weeknight. It’s also fairly quick to make with only about 15 minutes of cook time and hardly any prep work needed. Let’s face it, we’re all suddenly a lot more influenced by a ‘beans and rice’ diet. Pantry cooking can be tricky, but it can also save time, money, and still be pretty damn healthy for you. This Chickpea Tikka Masala is a one pot dish that cooks up in just about 30 minutes. It’s gluten free, vegan, and vegetarian. Plus, like I said, one pan to cook it all means less mess to clean up in the end.

It’s starting to really cool off and stay cooled off here in Austin and I couldn’t be any more ready than I am! Bring it on Fall! This One Pot Vegan Pumpkin Curry Soup is a great Fall soup. It’s thick, ‘creamy’ without any cream added, and perfectly guilt-free. It’s also gluten-free with no added oils or sugars! The best part is, you get 2 heaping cups in each serving that comes in well below 300 calories.

Even with all of that? This soup is easily made in ONE pot in under 30 minutes! How can a dinner time soup get any easier than that? Did I mention this soup is completely delicious? Yeah, that too…

Instant Pot Chickpea Curry

Meatless Monday is continuing to grow in popularity. To be very honest, there’s more than one meatless night in my house every week. As I’ve sad before, it would be really really easy for me to turn into a vegetarian. This Instant Pot Chickpea Curry really takes the cake though. Not only is it vegetarian, it’s vegan, gluten-free, dairy-free and only takes about 10 minutes to make. And that includes prep AND cook time. Don’t worry, you can thank me later.

This curry is started off with yellow onion and then loaded up spices. The trick to any good curry, is to let the curry powder and seasonings cook for a couple of minutes BEFORE adding in the other components. Warming the spices here gives you more depth of flavor and really wakes the seasoning up!…

So about a week ago I got my hands on the biggest butternut squash that I've ever seen in my life. The best part about it was that it was from a local Texas farm, which you know I'm all about. I had already used the squash in two previous meals this week and was racking my brain to come up with a third and final use so that I could get it all eaten up before the weekend. Because, you know, there is a lot of Easter happenings and I couldn't let this beauty go to waste.
