'Everything' Deviled Eggs

March 2, 2019 Amanda Plott
everything-bagel-eggs6.jpg

Everything Bagels and the seasoning used on them is ALL the rage right now. So when I got some of the seasoning in my hot little hands this weekend… I knew that I was going to have to make a few fun things with it! These 'Everything' Deviled Eggs were first up on the list.

Deviled eggs are sort of staple in my house. They’re a favorite around here, which of course I don’t mind one bit since they’re pretty damn good for you. Low-carb, low-fat, high protein, and of course… gluten-free! Good stuff all the way around. And when you add ‘Everything’ seasoning into the mix? Well, you just can’t go wrong…

Italian Couscous Salad

February 21, 2019 Amanda Plott

This Italian Couscous Salad is as quick and easy as a ‘pasta’ salad can come. With a few chops here, some dices there, a good hefty few stirs and a little while in the fridge, this salad is ready to go and full of flavor! It’s pretty loaded with fun bits too such as salami, fresh mozzarella, basil, olives, and plenty of Italian veggies.

I’d like to think that it’s sort of a fun twist on Antipasto. It’s light, it’s pasta based, and it’s served cold. While usually it’s as a side, I’ve enjoyed eating this for lunch with a hard-boiled egg on the side. But it would also be great served as a side at dinner. Say… paired with a pesto marinated grilled chicken breast…

French Dip Bites + Au Jus

February 4, 2019 Amanda Plott

Sometimes the family just wants something light and snacky for dinner. These French Dip Bites are perfect for being added to any game day or get-together spread. They’re rather quick and easy to make… and that homemade au jus? Mmm… that may just be the best part! It’s delicious and almost fool proof.

Usually au jus can be complicated and time consuming. This one though? Easy breezy with no drippings required. Plus, being as its homemade, you get to decide how to season it! While the bites themselves are delicious the au jus is really the star of the show here…

Bowls are all the rage right now. Breakfast bowls. Lunch Bowls. Dinner bowls. Healthy bowls! Fortunately, this bowl can be either of those. One of the best parts about this bowl though is that it’s super easy to put together. This bowl starts with some cooked quinoa and is layered with greens, avocado, pesto, and of course - an egg!

Everything’s better with an egg on it, right?…

YOU! Yes, you! Are you making this year a healthier year? I know I am! This year, just as with every year, I’m striving to eat less and less meat for a plethora of reasons. And just like me, once you try these Vegan Biscuits & Vegetarian Country Sausage Gravy… you’ll be convinced just like I was! There are two things that make me nervous in the kitchen though, and that’s baking and anything involving a roux.

A roux is a thickening mixture that’s made using butter and flour, and as I’ve found out over the years, it can be tricky. Or can it? Maybe it’s just all in my head and I make it more complicated than it really is. That sounds more like the truth of it. So… I figured why not try and test my limits even more by baking vegan biscuits and making a vegetarian country style sausage gravy to pair?…

Cheesy Bacon & Pesto Potato Skins

This post has been sponsored by Moink. As always, all opinions are mine alone.

We’ve all made our New Year’s resolutions and now it’s time to continue sticking to them! This year, as with any year, my goal is to continue eating better and more health conscious. Eating ‘right’ can come in a lot of forms, and for me one way to do that this year is to start eating more ethically and simply.

These potato skins are just that. Simple. As simple as they can possibly be. From the potato to the bacon on top there is minimal ingredients used or time spent here! Another good thing about these potato skins? They’re great as a side dish OR as a hot appetizer. I’m thinking… game day spread. Oh, yeah!…
