Healthified Crock Pot Pulled Pork & Mustard B.B.Q. Sauce

This BBQ sandwich is to-die-for.

The mustard BBQ sauce has quite a kick to it on it's own, but when you combine it with the natural sweetness from the pork... it's a beautiful, beautiful thing.

I'm from Texas, so I'd like to think that I came out of the womb knowing a thing or two about BBQ.

I had suddenly found myself with an overwhelming about of French's mustard that was provided at no cost to me. I was then poised with some serious internal debate. What am I going to do with all this mustard?

Of course, one of my very first thoughts... was BBQ sauce...

Skinny Crock Pot Cochinita Pibil

Healthified Chinese BBQ Pork (Char Siu)

The Chinese New Year was a few days ago (well... okay... almost a week ago...), and I really wanted to have this recipe posted in time but... it just didn't happen that way. Oh, well!

Char Siu or 'Chinese BBQ Pork' literally translates to 'fork burn/roast'. It's usually well known for it's bright red colored outside layer caused from marinating and cooking in a traditional glaze sauce.

This is my healthified version of Chinese BBQ pork. It's typically made by roasting a pork shoulder in a special sauce, chopping it, skewering it, and charring it with more sauce to glaze. Well, sometimes less is more...

BLT Lettuce Wraps

When I first had the thought to do BLT Lettuce wraps, I was scared that they wouldn't be filling enough or hefty enough to satisfy as a meal. So when I went to work putting these together, I made sure to use some nice big romaine leaves and lots of chunks of tomato as filler.

These were super amazing and oh-so-filling! I even had trouble in getting all three down but they were just so delicious and guilt-free that I felt I owed it to myself and the rest of the world to bully through the last one.

I think the next time that I make these, I'll do two per serving instead and serve along side a bowl of Skinny Tomato Basil Soup!...

Black-Eyed Pea Gumbo

Every year when I was growing up, my mother force fed us black-eyed peas on New Year's Day. What can I say? We're southern and it's a tradition thing. It's supposed to bring you good luck for the upcoming year. But, what eating 'dirt peas' has anything to do with a new year or good luck... escapes me entirely.

The peas were often straight from a can and without any seasoning of any kind. Usually served on the side of some sort of ham. While my mother enjoyed the out dated and rather odd tradition... the rest of us could barely stomach the one spoonful a year which we struggled down just to put a smile on my mom's pretty face. Love you, mom!
