Skinny B.L.T. Soup

I'm busy in the kitchen this week as I prepare for Thanksgiving so... I needed something super simple to make myself for lunch that I could then enjoy for a few days after the one preparation. I've been craving a nice BLT sandwich lately, but I'm also trying to stay away from gluten a little bit too. So, with bread out of mind (and  BLT Lettuce Wraps already done), I started to think about how else I could enjoy the flavors of a BLT in a different form. Ta-da! BLT soup.

This soup is pretty amazing. When topped with the shredded lettuce, the greens wilt just enough to soften but still retain a bit of texture; adding another dimension to an otherwise rather smooth soup. And of course, the bacon adds all the awesome. How can you go wrong with anything involving bacon? You can't!...

Crock Pot Pork Chile Verde

I had some leftover tamales that I stored in my freezer a week or so ago, and I was wanting something warm to pair them with that wasn't chili. I'm a little burned out on beans lately. Gasp! No, no. Just meat and vegetables here. Somewhere in the midst of racking my brain, I remembered this Mexican style stew that they serve up at one of the favorite local Mexican places here in Austin. Skinny Loaded Potato Breakfast Skillet

This is one of those super easy breakfasts that live in infamy. I'm not entirely sure what spurred the thought of having a loaded style potato for breakfast but... it all worked out fabulously well. There's really not much in a loaded potato that you wouldn't normally have for breakfast anyway. So why not toss an egg on top and call it done?

Done.

Cheesy bacon potatoes and an egg for right at 300 calories and a full belly? Yes, indeed! It's one of those things that looks and feels so naughty, but actually couldn't be much more guilt-free! This is a clean and lean breakfast that is sure to give you enough energy to make it through your morning...

Crock Pot Pumpkin & Maple Pork Tenderloin

Oh. My. Goodness.

My house smelled like maple heaven for an entire day with this cooking up in the kitchen. And yes, it tastes just as great at it smells! It was all I could do to keep from going in there towards dinner time and picking off the 'crispy' end pieces to snack on.

Yes, I'm that one. My mom and I are well known for tag-teaming the burnt ends at any family barbecue.

This pumpkin maple tenderloin was pretty amazing and perfectly fitting with pumpkin season and fall weather as it rolls in. I was a little skeptical at first since I'm not generally a fan of adding sweetness to my pork, but it was just the right amount of sweet and tang with the apple cider vinegar...

Healthified Pork Skewers "Faux Ribs"

Is it bad of me to tell you that even as a Texan... I can't stand to eat meat off the bone? I'm a white meat only (no dark meat here) and boneless kind of girl. I always have been for as long as I can possibly remember. That's right. I don't care for ribs on the bone, wings (or legs) on the bone, or even steak on the bone! No bones.

I've said it before, I could very easily become a vegetarian without skipping a beat. In fact, I've found that eating meatless dinners 2-3 days of the week slash my grocery bill and helps me to feel better overall. That being said, I am a Texan and barbecue is a weekly requirement as well!

Since I'm a boneless fan, skewers are sort my go-to for faux ribs. It gives me that raw carnivore feel while not grossing me out in the process. Plus, I get to use a leaner cut of meat for my 'ribs' - which meals less calories and less guilt...

Baking bacon is a handy trick that I picked up a few years ago and quickly fell in love with the idea.

So, why bake your bacon?

Baking your bacon will save you the usual mess in the kitchen (or your microwave.) Plus, it cooks evenly and crisps up nicely while a vast majority of the grease is discarded! Another bonus? You can make a rather large batch of baked bacon rather effortlessly as compared to pan frying. Baking your bacon also tends to keep it from curling up, leaving your bacon straight and perfect!...
