Skinny Tomato Pie

A couple of weeks ago my grandma and I were out running errands when we decided to stop at this well known place here in Austin called Kerbey Lane. They are famous for their unique twists on classic foods. As an added perk, they generally pride themselves on using organic and locally grown items in their kitchen.

Stuffed Breakfast Peppers

I've made Baked Egg and Avocado Bowls before, which are amazing, but I am also a fan of stuffed peppers. So, I figured... why not use the same idea and stuff peppers as a healthy low cab breakfast option? Of course!

These peppers are super easy to toss together and taste great. I was a little surprised with how filling and satisfying these were. I'm generally a carbivore in the morning.

Yes. That's right. A carbivore.

You know, similar to a carnivore... but with carbs rather than meat.

Skinny Cheesy Green Chile Sausage Gravy

A few words that you don't normally see in a description together? Skinny, cheesy, and gravy. But, somehow I've managed to pull it off. This gravy is so full of vegetables and lean sausage that you can absolutely afford the cheese that's in there.

Cheeseburger Stuffed Zucchini Boats

I can has cheezburger? Without feeling guilty?! Yes, indeed! We all can.

These stuffed zucchini boats are a perfectly clever way to have a bun-less burger that I find to be a lot more filling and easy to eat than wrapping a patty in a mere lettuce leaf. You get all the satisfaction and flavors of a traditional cheeseburger packaged neatly into a zucchini squash.

Trust me when I say - you won't miss the bun at all!...
