This New Year has gotten off to a great start around here, full of new friends, new family, and lots of fun. As always for the past few years, a better diet is always towards the top of my list. While I feel that I have a pretty good handle on that, there's always room for improvement and trying new things, of course!

Once a week we have a 'donut' day here at the house, which I tend to avoid like the plague. Most of the time I'll busy myself with work and enjoy my coffee and whatever healthy breakfast option I have going on at the time. So, I'm kind of in love with scones. They're easy to make, delicious, and extremely versatile. Today I wanted to make some scones that would help me bring in the New Year and help me reach my goals while also getting me into the spirit of Valentine's Day (because you know that's just around the corner too!) What better way to achieve both other than with dark chocolate and some cherries? Yum, yum.

I used one of my older scone recipes to start out as the base for this one. And it worked out beautifully with the few changes and new additions that I made to it.

What can I say? It's fun to sometimes go back to revisit older recipes while also adjusting them to my ever changing taste and desire...

Healthified Huevos Rancheros

I'm a Texas girl, and with that comes lots and lots of Tex-Mex, and not just for dinner either. Breakfast, brunch, lunch... doesn't matter the time of day, there's always a good excuse for Tex-Mex! One of my most recent favorites for breakfast or brunch is a healthier take on an older classic, Huevos Rancheros!

Don't know what Huevos Rancheros is? You poor thing!

Huevos Rancheros (rancher's eggs) is a pretty basic dish, usually consisting of fried eggs over a lightly fried tortilla and served with beans, salsa, and avocado in some form or another. Skinny Mimosarita

I'm a huge fan of mimosas. It's one of my most favorite brunch drinks! I think the first time that I ever had one was many many years ago on my parent's boat on one of our Sunday-Funday weekend excursions around the local lake at the time.

So what in the world is a mimosarita? Well, since I'm sticking with my Cinco di Mayo theme this week so I didn't want to go for the typical mimosa or margarita. Instead, I decided to go with a mimosarita! So what is that? It's basically a combination of a mimosa and a margarita; made with limeade instead of orange juice. The best of both worlds...

Skinny Guinness & Irish Cheddar Crustless Quiche

When I was growing up, quiche was basically a staple in our house. My dad would usually go through the fridge and use up any leftover meats, cheeses and vegetables to make a hearty quiche which was typically served with soup or a salad of some sort.

Quiche is definitely a good way to use up leftovers.

I've always loved quiche. It's sort of like having breakfast or brunch for dinner in my opinion and generally when you think of quiche, you don't think healthy or low calorie by any means.

The quiche of my childhood always had the usual pie crust at the bottom, so when I started off cooking I tended to follow suit. A few years ago though, I stumbled upon the idea of a crustless quiche. ...Why not? The crust to me always just seemed like wasted calories anyway...
