Easy Ratatouille & Cheesy Parmesan Polenta (Crock Pot)

So, I've been on the hunt for a good way of making ratatouille lately. I had tried it many many years back when I was a brand new mother. But, it didn't turn out at all the way that I had wanted. It soured my opinion on ratatouille and eggplant for years to come. Eggplant is not my most favorite vegetable, but ratatouille is one way that I will eat it.

I think that I'll eat almost anything if it's got pasta sauce and/or zucchini involved.

A few weeks back, I had tried this recipe out while my grandmother was still visiting. It got rave reviews from around the table. As it turns out, I got an eggplant and an acorn squash in my most recent local produce box, and knew exactly what I wanted to do with it. Another ratatouille!...

This BBQ sandwich is to-die-for.

The mustard BBQ sauce has quite a kick to it on it's own, but when you combine it with the natural sweetness from the pork... it's a beautiful, beautiful thing.

I'm from Texas, so I'd like to think that I came out of the womb knowing a thing or two about BBQ.

I had suddenly found myself with an overwhelming about of French's mustard that was provided at no cost to me. I was then poised with some serious internal debate. What am I going to do with all this mustard?

Of course, one of my very first thoughts... was BBQ sauce...

I spent the day revising this recipe after I had some similar comments regarding the amount of vinegar and beer being too harsh for some. I think everyone will enjoy the new final copy even more than the previous one!

I've kept the same basic recipe with a few minor adjustments and fine-tuning... since I don't want anyone to be displeased with anything they try here (within reason of course.)
