With the onslaught of summer and my little one now home with me for duration of these long hot months, my morning routine has certainly shifted. Even with it's changes, there are those few staple things that always stay the same. One of those things if me starting my day off right with my morning cup of coffee. In fact, it's become common laughable knowledge around here not to attempt communication until I've had my java. Hah!

Once I have my coffee I start in on making breakfast for whoever happens to be around. On most mornings, it's just myself and my little girl. But, my place is sort of the middle ground for most of my family, so there's a handful of people that come and go on occasion; my lovely 'wild cards'. This morning, my wild card was my little brother. I always like to feed him because he's not afraid to tell me what he really thinks...

Skinny Mixed Berry Monkey Bread

I know what you're thinking... how in the world could monkey bread be considered skinny? Well, I've lightened this up as best I imagine anyone possibly could considering that it's a sugary, decadent, gooey, caramel mess of a breakfast treat. So bear with me for a bit while I try and explain all the good that I've done here.

Monkey bread is one of my favorite breakfast or brunch treats, largely in part to the fact that it's so easy to toss together and always comes out in an impressive form. I mean, you know... look at it. It's truly drool-worthy. The only down-fall of it is that it's usually one of the most sugary and unhealthy breakfast bites out there. So, I've taken this traditional treat and revamped it into something a little more guilt-free...

Corned Beef Breakfast Hash

Now that St. Patricks day is over, the big question is... what do you do with all that leftover corned beef? Well, here is one of my favorite breakfast ideas that will use up that salty beef goodness while also soaking up some of the party from the night before.

I love my coffee. I seriously couldn't imagine a morning going by without a cup of my favorite joe to pick me up and get me moving through my day. This morning I was feeling even more indulgent and decided to take my morning coffee to the next level by pairing it with some delicious and decadent quick Raspberry Sweet Rolls.

These aren't your ordinary plain-jane sweet rolls either. Not only are they super easy to whip up with a handy-dandy little trick with crescent rolls, but I also amped them up by adding a cream cheese mocha drizzle over the top as the hero of the show.

Trust me, these aren't nearly as much of guilty indulgence as you might think either - just a perfectly awesome mocha filled sort of indulgence...

With the warmer and more sunny days upon us here in Texas, my mind often starts to go towards brunch items as Spring nears. It's truly one of my most favorite times of the year too. Though, a lot of that could have to do with the fact that my little girl's birthday is during Spring. She's truly the best thing to ever happen to me, and honestly as hard as being a parent can be at times, it's the most rewarding job in the world. Sometimes it feels too good to be true when she hugs onto me tightly and gives me sweet kisses randomly.

Since brunch has been on my mind lately, I thought it was the perfect time to get my Monte Cristo on. Not familiar with a Monte Cristo? It's generally a swiss cheese sandwich that's battered and fried and served with a side of preserves for dipping. Not exactly my jam. Pun intended. Bah-dum-pish.

However, I've come up with a pretty clever way to make this otherwise guilty dish into something that's more wholesome!...

A few weeks back, my brother was showing me this awesome breakfast/dessert that he had come across. He must think it's fun to tag me in some of the most 'un-skinny' recipe ideas that he comes across. Hey, if he didn't razz me I would think he didn't care!

Anyway, the thing he showed me was an amazing cinnamon roll french toast bake that truly had nothing good in it. To be a little bit of a smarty myself, I decided I was going to take that amazing looking bake and turn it into something that was still drool worthy but, also wouldn't have me bolting out the door to the gym after indulging.
