My little girl is 6 years old now and is a little eccentric. She's a lefty and as such is incredibly creative and imaginative. I'm not sure really who knows this yet or not, but I sort of have a giant fear of eating fish. I know, I know! It's a problem that I've been dealing with my entire life. I wish that I could bring myself to eat seafood at all. So far though, I haven't found success with it. What I tend to do instead, is make an otherwise fish-related recipe into something vegetarian.

I've always been curious about 'fish cakes', since they look like they could be mighty light and tasty if done right. In the past, I've made Chickpea & Quinoa Cakes, which turned out really good. But, today I wanted to try something a little different; adding in a kick of spice and bright bold Mexican-style flavors...

My birthday is coming up in a week, and so of course... this just had to happen.

I've been chewing on the idea of soaking some more gummy bears, since last time was rather well enjoyed by all. With my birthday just around the corner, I wanted to change it up a bit and make things a bit more festive. And what says birthday better than cake?

Well, I hope that everyone else is dry and enjoying the warmer spring weather! Here in Texas, we're getting nothing but rain. Not that I'm complaining, I mean... let's face it, we need it desperately still just as most of the rest of the country does.

This New Year has gotten off to a great start around here, full of new friends, new family, and lots of fun. As always for the past few years, a better diet is always towards the top of my list. While I feel that I have a pretty good handle on that, there's always room for improvement and trying new things, of course!

Skinny Nog Pecan Blondies & Nog Cream Cheese Sauce

As we're getting into the thick of the holiday season, I wanted to step out of the box again and create a lighter take on one of my most favorite desserts in the world, a blondie! Any blondie just won't do. It had to be full of pecans, white chocolate, spice, and topped off with a decadent cream cheese sauce.
