We all know that soup that they serve at the hibachi style steak houses and how good it is for being something so simple. It’s one of the main things that my kiddo happens to look forward to when we go, so a lot of years back - way back in 2013, I decided to try my hand at making the soup at home and it was a success!

Not only that, but I also made it in the crock pot, which meant that I didn’t have to have almost any hands on time. It’s definitely one of those ‘set it and forget it’ sort of things which makes it perfect for serving up as a part of an asian themed dinner…

Healthy & Easy Kid-Friendly Spaghetti Sauce

I'm calling this kid friendly spaghetti sauce because, I generally like to put actual onions and garlic into my spaghetti sauce. However, my little one would turn her nose up at that in a heartbeat, and seeing as how she specifically requests spaghetti every week, I figured that I ought to oblige her with something that would suite her desires!

Besides, who doesn't enjoy eating like a kid again? In my mind, that's one of the perks of being a parent; reliving all the things that you loved when you were growing up!

Though my mom was more of a Hamburger Helper sort of spaghetti maker.

She swears by Hamburger Helper 'Spaghetti' to this very day. Ugh…

Crock Pot Pumpkin Spice Oatmeal (Instant Pot too!)

Originally when I made this oatmeal, I had pretty recently posted a Skinny Baked Pumpkin Pie Oatmeal, but these two oatmeals are pretty far apart in the realms of texture and preparation. Plus, I’ve added in new instructions so this oatmeal can be made in an instant pot (pressure cooker) in under thirty minutes!

As usual, I've been running around like a crazy woman and I really needed a pick-me-up this morning to help boost me through the day. Back when I first made this recipe in 2013, my dear little girl had been sick for well over a week and only the day before was diagnosed with both a sinus infection and bacterial pneumonia. Everyone should know by now that I am a cheese freak. A cheeseoholic. A cheese master. ...I guess one could even say that I'm a bit... cheesy. Buh-dum-psssh. Queso is usually my go-to cheesy wonder of amazingness, but I thought today I would change it up a bit and go with something a bit more traditional and Americanized.

Crockpot Chicken Verde Pozole

Today is it, y'all! It's my birthday! And while I'm off taking the galant drive to Dallas to pick up my brother and my nephew for a few days... I decided to leave you all with this to savor until I return tomorrow. It's too effing hot out. So... no stove or oven for us today. Nope. We're going straight to the crockpot. My best friend during the summer months of Texas. While it does put off a mild warmth through the day, it's nothing like what my stove or oven will do. So, here we are!

Can I be honest in saying that I've never had pozole before? Never had it. Never made it. I'm not sure why either. 'Cause I'm here to say, that after today, it's going to be a staple around these parts. And I mean that too. This verde version of pozole is so very similar to my Legion Chili. Really the main difference here is the chili has beans and the pozole has hominy in it. What's hominy? Your guess is as good as mine. Hah! I kid...

Healthified Crockpot Low Country Chicken Boil

My local box of produce over the past couple of weeks has gifted me with a bounty of red potatoes that I can't bare to let go to waste! My mother asked me a couple weeks back about this recipe that I had put together a couple of years back now. With my brother not being a seafood eater and my dad being mildly allergic to shellfish, she wanted to put together a Low Country Boil that omitted the shrimp or crawfish. Being as I'm not a seafood fan either, I had tried my hand at a seafood-free low country boil, like I said though, this was a couple of summers ago.

So with an idea in mind and plenty of red potatoes to go around, I got to work on my Low Country Chicken Boil once again. Here among the southern states, summer time is when everyone starts to have crawfish boils! It's always sounded amazing to me; sausage, potatoes, corn - who wouldn't like it? Well, me!
