Healthified Crockpot Low Country Chicken Boil

My local box of produce over the past couple of weeks has gifted me with a bounty of red potatoes that I can't bare to let go to waste! My mother asked me a couple weeks back about this recipe that I had put together a couple of years back now. With my brother not being a seafood eater and my dad being mildly allergic to shellfish, she wanted to put together a Low Country Boil that omitted the shrimp or crawfish. Being as I'm not a seafood fan either, I had tried my hand at a seafood-free low country boil, like I said though, this was a couple of summers ago.

So with an idea in mind and plenty of red potatoes to go around, I got to work on my Low Country Chicken Boil once again. Here among the southern states, summer time is when everyone starts to have crawfish boils! It's always sounded amazing to me; sausage, potatoes, corn - who wouldn't like it? Well, me! Healthified Meatloaf Cupcakes & Cauliflower Mash

It's been a super long time since I made these Meatloaf Cupcakes. As in... years. A lot has changed since then, especially my tastes and cooking style. The very first time that I made these, they were in the traditional manner. Plain old ground beef and mashed potatoes. Nothing fancy. Nothing 'healthified'.

Today though, I've lightened these up and made them a little more wholesome by adding in some veggies like carrots, and zucchini too! I also used an extra lean ground beef which I kept moist and full of flavor by adding in an egg and reduced sugar ketchup. The vegges also help to keep the lean meat from drying out. Of course, I also used a cauliflower mash instead of straight up mashed potatoes to get even more vegetable goodness in there.

These are packed. PACKED. Loaded up entirely with vegetables, and the best part is that you would never guess it!...

Skinny 'Day Before' Mashed Potatoes

Once upon a time my mom and dad were in charge of Thanksgiving (along with all other Holiday meals) and my mom always ended up pretty stressed out, just like every other mother out there. Then along came my adult self. Together with my mom, we found the perfect end-all to the stresses of the Holiday cooking.

I had basically stumbled onto a perfectly planned out and super delicious make ahead menu plan that was complete with days, times, oven temperatures, etc. You name it, it was there. I like to consider it my Holiday Feast Code Book. Or Holiday Cooking Bible. Loaded Green Goddess Sweet Potato Fries

For me homegating is the way to go with any sport. Who doesn't like tailgating from the comfort of home? It's the best of both worlds! I get to watch my favorite teams live on television without the hassle of the hustle and bustle of crowds, lines, and over priced concession stand foods. Of course, to me, that's the best part - creating my own game day grub!

I always strive to put my own fun and healthful twist on what some might consider traditional. Fries and dips are always a staple of any good game day spread. So, today I give to you these rather guilt free, sophisticated, fiber full sweet potato fries.

My inspiration for this dish started with a stuffed sweet potato that I made a few weeks back. I had loaded a baked sweet potato up with sautéed spinach, black beans, and some homemade green goddess dressing. It was definitely not your typical baked potato, and was amazingly delicious. Crock Pot 'Baked' Potatoes (With Skinny Pesto & Parmesan)

For the longest time, I never knew this little trick. You can fake-bake your potatoes in a slow cooker, and it's so super easy that it's pretty ridiculous!

I've been using this method for a while now, and it's definitely handy during the hotter spring/summer months when you don't want to boil the house up with turning your oven on. Plus, the potatoes can sit there and cook through the day leaving you not to h ave to worry with them at all...
