Over the lifetime of The Skinny Fork, I've been blessed to see such growth between myself and the blog. As strange as it may seem, we both seem to push the other to our limits in mostly positive and amazing ways. I'll be honest in saying that I'm a bit of an introvert. I could hold up in my house for days on end and never give it a second thought. I have a lot of social anxiety that I've been steadily working through as I become older and more confident in myself.

One of the most interesting things I find is that being a blogger has often pushed me into social situations; meeting and working with new people. Lemon Poppy Seed Bread & Pink Grapefruit Glaze

Alright, alright... so not every recipe goes as planned. Sometimes I feel like I live in a test kitchen over here. Some things work out perfectly and amazing the first time, but other times... not so much. Baking is hard y'all. It's true what they say, that baking is both a science and an art. Trust me. I have kitchen woes just like anyone else, and this recipe right here is evidence of that if nothing else.

I've had it in my little head for a few weeks now that I wanted to make a lemon poppy seed cake/bread. However, my first attempt was a complete flop. And what's worse? I thought even up until I took it out of the oven that it was going to be great. The batter tasted great. It rose perfectly in the oven, doing everything it was supposed to do before POOF it collapsed into a dense mess of super sad lemon bread. Sigh...

I'll be the first one to admit that I'm pretty much in love with zucchini and summer squash. They are possibly the most versatile and easy to work with vegetables that you'll ever encounter. Mediterranean Lunch Bowl

After this busy holiday weekend that was full of cooking out and even a few drinks, I was really looking forward to getting something fresh and green and clean in my system today. It's amazing how just a few guilty pleasures can leave you dragging behind, no matter how careful or conscious you are! Needless to say, I was well prepared with my shopping list having it's fill of mostly produce this week. 

This mediterranean lunch bowl really hit the spot, being full of bright veggies and protein too! I kept the 'recipe' rather light and simple since coming down off of a busy (and rather long) weekend leaves me scrambling to get everything back in order. Greek Stuffed Avocado Bistro Box

So initially I wasn't going to post an actual recipe for this, it was going to just be some fluff for Instagram since I'm always posting pictures of my little lunches and the like. But, it was so good that I just had to share it in it's full majesty!

While it only takes a handful of ingredients to make up this quick little lunch, it's packed with great flavor and healthy fats that will help you get through your day with ease. Mediterranean Olive Salad

As a health food blogger, I like to stay in the know about all the different diets and ways of eating that are currently being circulated. One of the ones that's become quite popular over the past few years has been the Mediterranean Diet.

The Mediterranean Diet is pretty simple and incorporates the basics of healthy eating; including fruits, vegetables, fish, whole grains, and limited unhealthy fats. Any way of eating that allows for olive oil and a few glasses of wine is a bonus in my eyes.

The basis of the Mediterranean Diet is eating primarily plant-based foods, such as fruits and vegetables, whole grains, legumes and nuts. Replacing butter with healthy fats, such as olive oil. Using herbs and spices instead of salt to flavor your foods. Limiting red meat and eating fish and poultry at least two times a week. Plus, red wine in moderation!

All of these things are pretty much how we eat in my house on a day to day basis...
