Breakfast does not have to be a chore. This Tater Tot Breakfast Bake is quick to toss together and pretty much does it's own thing while baking in the oven. Giving you plenty of time to do other important things. You know... like settling into your back-to-school routine. One of the best parts about this breakfast casserole though, is that it can be made ahead and popped in the oven any time.

Being as it makes a rather decent sized pan of it, you could probably enjoy this all week long with a quick reheat in the morning to enjoy it again. This is a pretty hearty and filling breakfast too. There's layers of sausage, egg, cheese, potatoes and yes... even some bacon!…

Italian Turkey Meatballs & Sauce (Crock Pot or Instant Pot)

An old recipe, but a good one that I just recently updated with some new photos and also a quicker way to cook these meatballs in an Instant Pot too!

This has been a favorite of mine for a long time now. Ridiculously easy? Yep.

This recipe that's a healthy take on an old classic. Flavorful turkey meatballs simmering in thick hearty tomato sauce all day long to cook. Who needs the pre-made bottles off the shelf? Not this girl.

Everything's bigger in Texas, right? I kept the size of these meatballs rather large since I have some fun plans for the leftovers. And the sauce? Oh, yes. The. Sauce. This is amazing stuff right here…

So, back when I was in high school, my parents had a boat. It wasn't a big boat or an expensive boat. Just an old clunker of a boat. In fact, it ended up sinking. At the dock. ...And almost with my grandmother on it too! ...Even so, our family had a lot of great fun and adventures on that boat. Talk about a twist on classics, y'all! Today I've combined two of my most favorite things together; spicy thai peanut dressing and burgers! I know it sounds crazy, but just hear me out. I used to be a rather picky eater. In fact, I was such a picky eater growing up that my mom and dad had to tell me that beef came from a 'beef tree' so that I would eat it. As I've gotten older, my tastes have changed. My mind has expanded. And my pallet continues to get more and more educated. That isn't to say that my mouth is snobby, just that I'm far more open to new things.

Take goat cheese for instance. I'm an avid cheese lover, and I've never met a cheese I didn't like, but I have often found myself questioning and unsure of goat cheese for some reason.
