I’m busy. You’re busy. We’re all busy right now! The Holidays are hot on our heels and it’s a mad dash to the finish line by now. With being a bit under the weather for this past week, I’ve been doing my very best (yet still failing more than once) to feed the house. With that being said, I got wise halfway through the week and started to meal-prep most of the meals.

This Club Wrap is one of my current favorite lunches. It’s a quick bite that’s light, full of flavor, and perfect for grab-in-go situations. In all honesty, I based this wrap off of one that my mom and I shared a few weeks ago after a long and exhausting trip to the grocery store…

So, back when I was in high school, my parents had a boat. It wasn't a big boat or an expensive boat. Just an old clunker of a boat. In fact, it ended up sinking. At the dock. ...And almost with my grandmother on it too! ...Even so, our family had a lot of great fun and adventures on that boat. Many a summer night and day were spent out there on the water, together, as a family. It's truly some of my fondest memories.

Almost anytime we'd go spend the day out on the boat, we'd stop by this old gas station along the way to fuel up good ole' Titanic and grab some sub sandwiches. I almost always got the same thing, a simple club sub sandwich.

Several months back, my dad went out and bought another old boat; after years of not having one and living within near walking distance of a lake now. He's been working on fixing it up and hopes to have it in full working order for the beginning of July for my mom's birthday. That got me to thinking about my old long lost friend 'club the sub sandwich'…

The end of Mermaid week is upon us! I've saved the best for last with this Mermaid 'Seaweed' Wrap. There is a long history behind this wrap too! It's special to my family because it's been in the summer rotation for about 5 years now! Yep. That's just how good this wrap is. One thing I love most about it is that it's so versatile; making the perfect lunch box addition, summer lunch or even as a light dinner. It's perfectly 'meal prep' friendly and full of wholesome goodness.

I've dubbed it the 'seaweed' wrap since I like to use the bright and colorful spinach tortilla to wrap everything all up in. On the inside, I've loaded this wrap up with plenty of fun and vibrant mermaid inspired bits. The first layers are hummus and a low fat cream cheese, followed by carrots, tomatoes, spinach, and my favorite part, Chopped Eckrich Honey Cured Ham! It's all pulled together with some reduced fat feta and rolled to perfection...

Waffles are a big thing in my family, it's one of the few things that my little girl will readily eat without question. While I'm in the process of broadening her food horizons, I decided to take a few of her favorite things today to combine them into one perfect savory dish. Waffles, ham and shredded cheese!

Savory waffles are all the rage right now. They certainly are not just for breakfast anymore. I can remember back in my school age days that my parents would, on occasion, do a 'breakfast for dinner' night in our house, so this is somewhat an ode to that memory.

Plus, I just got done watching an episode of The Great Food Truck race where there's a fun food truck on there called 'Waffle Love' that is blowing the race out of the water. I tend to draw my inspiration from several unique places...

In honor of Dr. Seuss's 111th birthday being earlier this week, and with St. Patrick's Day right around the corner, I decided to make a play on Green Eggs & Ham!

St. Patrick's Day is actually one of my favorite holidays, and it also happens to be my dad's birthday. Happy Pre-Birthday, Daddy! My dad always thought it was fun to make Green Eggs & Ham for breakfast around his birthday. So, the idea for my take on Green Eggs & Ham was definitely inspired by him, even though I'm pretty sure that you makes his a whole lot differently...

Healthified Turkey Cuban Sandwich

I'm always on the lookout around Thanksgiving for recipes that I can use up my leftover turkey, and a lighter cuban sandwich is a perfect way to do just that! Don't know what a cuban sandwich is? Well, it's a wonderfully tasty little sandwich that is generally made with roasted pork, ham, swiss cheese, pickles and mustard on some rather hardy cuban bread. Supposedly the sandwich originated in one of my most favorite places in the world - Key West, Florida!

Since, once again this year, I will not be making my traditional Thanksgiving meal, I've been doing my part it making turkey ahead of time; as if I need to get my quota for eating turkey in before the year is up. Then again, I tend to cook with turkey all year long since it's one of my favorite lean meats...
