I’ve made this stew a couple of times before, and mostly just for testing purposes. Sometimes it takes more than one run to get these things just right. But, I can honestly say that I haven’t minded the process with this one!

The first time I made it, I did so in the Instant Pot. It turned out well enough, but I really wanted this to be a stew that everyone could cook. Not just those with a pressure cooker. I also ended up adding in some potatoes and carrots to make this a more veggie-ful dish. Those veggies, along with the beans in there, really makes this a hearty meal all on it’s own…

Crock Pot Beef Stew

The New Year is on the horizon and I couldn't be more excited! I've got my brother and my nephew in town visiting and one thing that my brother requested I make for dinner one night while he's here is Beef Stew! Now, I've made my fair share of beef stews in the past but since we're out and about this weekend I figured I would make a simple crock pot version.

Crock Pot Irish Beef Stew & Cheddar Herb Dumplings

I'm an Irish girl, what can I say? If I can find an excuse to cook with bourbon and beer, I'll find it! The idea for this dish actually came from my love of St. Patrick's Day and also my love of these Healthified Crock Pot Chicken & Dumplings, which I made a bit over a year ago and many many times since then.

I basically took the same structure of the Chicken & Dumpling recipe and made it into a hearty Irish inspired Beef & Dumpling recipe instead. This stew is packed full of bold flavor and lots and lots of chunky beef and vegetables. I promise, you won't feel like you're eating anything healthified, but you are. It's definitely a meal in a bowl.

Who knew that Beef & Dumplings would just as awesome as Chicken & Dumplings?

I wasn't sure this would work out, but in the end I'm extremely happy that I tempted the fates with this one...

Crock Pot Pork Chile Verde

I had some leftover tamales that I stored in my freezer a week or so ago, and I was wanting something warm to pair them with that wasn't chili. I'm a little burned out on beans lately. Gasp! No, no. Just meat and vegetables here. Somewhere in the midst of racking my brain, I remembered this Mexican style stew that they serve up at one of the favorite local Mexican places here in Austin. This is one of the best chicken dishes I think I've ever had. Seriously. It's one of my new favorites and I'm pretty sure it'll go into 'regular rotation' now. For such a rich and hearty dish, you'd be surprised to know that it is gluten-free, clean and especially lean - coming in right at 300 calories.

Now, mine did require a bit of babysitting but that's because I cooked mine for way longer than the initial hour needed to cook the chicken through. In fact, I left mine to sit for a few hours, which only boosted the already amazing flavors...
