Sundays are for brunching, and this Sunday is no different. With knowing tomorrow is Monday, and that today was going to be a lazy day for the most part, I decided to go ahead and make breakfast yesterday. Well, what does that mean? Alright, alright… so… monkey bread has been an obsession of mine lately. I admit it! I can’t help it. There’s just something about that warm fluffy bread that’s baked together with a bunch of ‘naughty’ bits. Of course, this monkey bread is a bit different. It’s savory instead of sweet. Baked Eggs in a Zucchini Nest

Wakey-wakey eggs and bakey! This mornings breakfast is brought to you by, leftovers! Okay, maybe not exactly leftovers but an accumulation of things that I indeed had leftover in my fridge that went unused through the week in some way shape or form.

For instance, the original plan for the spiralized zucchini was for zoodles in a vegan Pho. The same goes for the mushrooms. I'm not entirely sure why the tomatoes were untouched, but somehow everything always works out in the end. Just like these Baked Eggs in a Zucchini Nest!...

Avocado Caprese Omelettata

Have you heard me talk about the omlettata before? Surely you have. I've fallen in love with them. They are a perfectly easy and quick way to eat a healthy breakfast. I should know. I'm right smack dab in the middle of the 'busy season' around here. And by that I mean... the end of school, dance recital, and birthdays/anniversaries galore. (Happy Anniversary to my parents and also my parents-in-law!)

There's a lot of YAY going on, but also a lot of meltdowns (and I don't just mean with my 7 year old! Hah!) Anyway! I've been lacking a bit in the breakfast department and I had some local eggs in the fridge that had to be used up soon, so... I thought a new omlettata would be the way to go...

Cheesy Chicken & Vegetable Casserole

I'm not sure why, but I've sort of been in pasta mode lately. Maybe it has something to do with the fact that I have so much stocked up in my pantry by now that I feel I need to dwindle down the boxes. When I got a beautiful fresh summer squash and two ears of local corn in this past week, I knew that I wanted to do something fun with pasta for an end-of-summer sort of casserole. With everything taking on a rather yellow color, I wanted to throw in some chopped spinach as well to give another hue. It's all about eating the rainbow.

I had actually done a test run of this recipe a couple weeks ago, and was pretty pleased with the results. Of course, I did make a few tweaks here and there to fine-tune. The whole idea of this dish was to be something quick and easy for a weeknight dinner while also giving a creamy-dreamy sort of 'mac-n-cheese' inspired bite, though maybe on a more adult level...
