Fairy Garden Salad

We’re coming to the close of our ‘fantasy’ themed week of summer in my house. And since the initial recipe that I made was geared more towards the kiddos, I figured for this go-round I’d create something for the ADULTS. This fairy garden salad is loaded up with greens, sprouts, berries, and of course… edible flowers!

The way I see it? If I were a fairy, I would totally be eating flowers. That just seems like the fairy thing to do. Right? Right. That pretty light pink dressing there is definitely one of my new favorites. It’s got just enough tang and zip to make this salad really stand out. And of course… you can’t go wrong with PINK dressing…

Three Bean Salad

This dish is a great substitute for any of it's less healthy BBQ friendly counterparts such as pasta, chips, or dip. It’s an older recipe, one of the first I ever made. So, it needed a little bit of an update and some of the dust to be blown off of it.

Why not impress your tastebuds and save the calories for a beer or glass of wine at your next cookout instead? Now that's what I call BBQ friendly! Skinny Classic Meatloaf

It’s been a hell of a long time since I made a meatloaf. I mean… a really really really long time. Almost 5-6 years or something? I’m not really sure why either. It’s a quick and easy part of dinner that can be tossed together in no time at all. Plus, it can be made to be pretty damn healthy too!

Lightened Up Frey Pie (Game of Thrones)

As most of the world knows, the premier of the Game of Thrones TV series was yesterday. We’ve only got 5 more (lengthy) episodes left. In this house, we were celebrating with official Game of Thrones beer and also this DELICIOUS Frey Pie. Don’t worry, there’s no people baked into this pie, but it is a fun nod to the popular series and what happens when you cross Arya Stark.

This pie reminds me a lot of a traditional pot pie. One of the main differences here though is the meat that is used is ground instead of the usual shredded or cubed. It’s also loaded up with plenty of veggies. Namely mushrooms, carrots, and of course potatoes. It’s a hearty pie if ever there was one. We’ve got to survive the longer winter after all, right?…

Lightened Up Carrot Cake

I’ve made a good lot of carrot cakes in my time. Anywhere from traditional to gluten-free, and a few others along the way. There’s a few things I’ve learned in my carrot cake making journey. One is that you always ALWAYS need a good simple cream cheese frosting with it. And two is that it needs to be chunky.

I like my carrot cake loaded up with plenty of the good stuff. Carrots, raisins, pineapple, coconut, and yes… even nuts!

I based this ultimate carrot cake off of the one that I made for my daughter’s 2nd birthday. It’s an ingredient heavy cake, just like most carrots cakes are, but I promise you that the cake itself is rather easy to make. No overly complicated instructions…

Rainbow Carrot Salad

Spring is well on the way and when the weather starts to turn warm, I start to crave that bright burst of citrus and salad. Namely lemons and anything cool and crunchy. This Rainbow Carrot Salad is one for the books. It’s light, easy to make, and a perfect little side dish for any good weeknight meal.

This Rainbow Carrot Salad is one that I love to serve along side my Crunchy Garlic Baked Chicken, since both have just a touch of that fun lemon zip. The carrots are a good base for this salad. They’re cool and crunchy while being able to soak up all the other flavors going on here…
