Breakfast is the most important meal of the day, they say. And I tend to agree. If you start your day off right with a nice breakfast, the rest of the day tends to follow suit. One of my all time favorite breakfast (or brunch) items is eggs benedict. A simple breakfast bite with english muffins, eggs, and hollandaise sauce. However, with the holidays coming up, I tend to gravitate towards casseroles.

Leftover Turkey Stew

It’s hard to know exactly what to do with leftover Turkey after Thanksgiving. I’ve made soups, dumplings, and a few other things in the past. This time though, I thought I would try my hand at making a sort of stew. It was surprisingly cold here on Thanksgiving this year, which is pretty strange. The past few years, we’ve had a super sunny Thanksgiving with a high of something near 80 degrees.

This year, we were in the 50’s, it was over cast, and misty. Normally I would say it was a ‘yucky’ day, but I always enjoy cool weather on the holidays that keeps everyone indoors and cozied up together. You know, encourages us to spend family time together. Roasted Red Bell Pepper & Tomato Soup

During the colder end of Fall and on into Winter months, I like to stick to comfort food classics. And there isn’t much that’s more of a comfort food or a classic than a nice warm bowl of homemade tomato soup. I’ve made a lot of tomato soup in my past, and for this Roasted Red Bell Pepper & Tomato Soup I used one of my favorite recipes and changed it up just a bit.

With the Holidays coming up quickly, I like to get a few fun appetizers in mind ahead of time. Deviled eggs are one of my staple snacks just because most people enjoy them, they're quick and easy to make, and they can be pretty impressive when you put a twist on the very classic and simple egg.

Skinny Creamy White Chicken Chili

It suddenly got freaking cold here, y’all! Really, for the past few days it’s been unseasonably cold. I think I heard that Austin had the coldest Halloween that we’ve had in 30 years or something?
