So, the air fryer has quickly become one of the most used gadgets in my kitchen lately. It’s not only a time saver when it comes to crispy-crunchy bites that I normally bake, but it’s also fun to play with and tends to get my usual faux fried things even more of the faux fried texture and taste!

Italian Chicken Soup (Instant Pot)

The weather is starting to cool off here in Texas. And by cool off, I obviously mean it’s down to being in the 90’s on most days instead of the 100’s. Even so, I’m excited for Fall. I love it when Fall starts to roll in, the temperature changes, the leaves drop, and it’s time for pumpkins and spice. Well, almost…

With Fall on the mind, I decided to make an Italian Chicken Soup for dinner this week. This soup is sort of like a minestrone, only without being quite so tomato heavy. This soup makes its own broth while cooking in the pressure cooker with all those yummy veggies and chicken.

Lightened Up Frey Pie (Game of Thrones)

As most of the world knows, the premier of the Game of Thrones TV series was yesterday. We’ve only got 5 more (lengthy) episodes left. In this house, we were celebrating with official Game of Thrones beer and also this DELICIOUS Frey Pie. Don’t worry, there’s no people baked into this pie, but it is a fun nod to the popular series and what happens when you cross Arya Stark.

This pie reminds me a lot of a traditional pot pie. One of the main differences here though is the meat that is used is ground instead of the usual shredded or cubed. It’s also loaded up with plenty of veggies. Namely mushrooms, carrots, and of course potatoes. It’s a hearty pie if ever there was one. We’ve got to survive the longer winter after all, right?…

Cranberry BBQ Chicken Bites (Instant Pot)

Summers are for BBQs! The only thing is... it's really hot out right now in Texas. I mean... really hot. We're hovering just outside of the three digit thermometer reads, but let me just say that it doesn't feel like it. Since it's so hot out, I'm opting to stay inside where it's nice and cool. And while normally my oven is in shut-down mode for a couple more months, these BBQ chicken bites were worth it to cook inside today!

Healthified Meatloaf Cupcakes & Cauliflower Mash

It's been a super long time since I made these Meatloaf Cupcakes. As in... years. A lot has changed since then, especially my tastes and cooking style. The very first time that I made these, they were in the traditional manner. Plain old ground beef and mashed potatoes. Nothing fancy. Nothing 'healthified'.

Today though, I've lightened these up and made them a little more wholesome by adding in some veggies like carrots, and zucchini too! I also used an extra lean ground beef which I kept moist and full of flavor by adding in an egg and reduced sugar ketchup. The vegges also help to keep the lean meat from drying out. Of course, I also used a cauliflower mash instead of straight up mashed potatoes to get even more vegetable goodness in there.

These are packed. PACKED. Loaded up entirely with vegetables, and the best part is that you would never guess it!...
