Instant Pot Cheesecake Bites

Most recently I found a fun way to make tamales in the instant pot, and being as I’ve also made a cheesecake in the instant pot too, I thought… is it possible to make mini cheesecakes? As it turns out, it is! These Instant Pot Cheesecake Bites are fun and easy to make. Plus, they’re lightened up just enough to be guilt free while still tasting great.

Instant Pot Tamale Bites

Ever wanted to make tamales but just weren’t completely sure how? These chicken Instant Pot Tamale Bites are not only easy to make, they are delicious and take hardly any time at all. To make these tamale bites, you do need a silicone egg bite mold, but you don’t need any corn husks at all!

You simple spread the masa dough into the silicone mole, fill, top, and cook in the pressure cooker. Yep! That’s all there is to them. I used chicken in these tamales, but you could really use any sort of shredded meat or vegetarian filling that you desire…

Instant Pot Cornbread

I’ve done a LOT of things in my pressure cooker, but I have yet to bake anything in it. Oh, you didn’t know that baking in the Instant Pot is totally a thing? Yeah, I didn’t really either. Now, I’ve gone as far as cheesecake before, which in my mind makes at least a little sense considering when you make a cheesecake in the oven you usually use a water bath to keep the cheesecake moist. Bread though?

I’ve made cheesecake in the instant pot before and with Thanksgiving coming up so soon, I thought it would be a great time to make a pumpkin cheesecake! This festive and lightened up cheesecake takes no time at all to put together and make in the pressure cooker. Plus, it’s every bit as good as any baked version while saving you time and the hassle of actually baking it.

It’s lightened up in the easiest of ways, using reduced fat cream cheese and substituting some of the sugar out for natural sweetener; which can be any sort that you like. This delicious vegetarian soup is made in no time at all in a pressure cooker. No meat needed. This creamy dreamy mushroom soup is made with just a few staple ingredients and is perfect for busy Fall and Winter evenings for dinner. It’s hearty and warming and is delicious served up all by itself. No side items needed here!

Despite the fact that this soup is creamy, there’s no cream involved! A quick and easy to make roux is what thickens this soup and gives it that creamy-like smooth texture. Generally in the past I’ve made a similar soup to this but with chicken added, but I’ve got to say… I didn’t miss the meat here at all…
