Irish Braid Bread

With one of my favorite holidays coming up (St. Patrick’s Day) I thought it was about time to start rolling in a few fun takes on Irish dishes. One of our family favorite Irish bites has to be corned beef. It was actually one of the first meats that my picky-eater of a daughter would eat!

This Irish Braid Bread is sort of a take on an Irish infused Stromboli. It’s a croissant dough that’s wrapped (or braided) around corned beef, cooked spinach, red potatoes, and irish cheddar. It’s been a bit chilly here in the mornings. And yes, it does get chilly in Texas. While there’s cooler days and nights around for another 6 weeks thanks to a wonderful and all knowing groundhog, I thought I would keep with he trend and make a delicious, hearty, and filling veggie pot pie.

Shisho Pesto

So, I realized the other day that due to the shape of world right now that I didn’t get to do as much with my backyard herbs as I generally do during the Spring and Summer. Usually I have a yard that’s plentiful with basil, rosemary, thyme, oregano, limes, and grapes! Sometimes there’s some strawberries and tomatoes out there too.

Sun-Dried Tomato Chicken Pesto Wrap

If you’re looking for some lunch time inspiration, here you go! This Sun-Dried Tomato Chicken Pesto Wrap is super quick and easy to make with just a handful in ingredients and a ton of flavor. When I got my hands on the sun-dried tomato tortilla wraps, I thought it would be fun to use them to make a ‘caprese style’ twist on a wrap with them.

So I loaded them up with two different kinds of pesto, chicken, bacon, mozzarella, and baby spinach. That’s pretty much all there is to it! Roll it all up together and you’ve got one of the easiest and most tasty wraps you’ll ever come across.

I served my wraps with baked chips and some fresh veggies, but some fruit, soup, or even a salad would also be nice sides here.

If you’re making this head of time as a meal prep, there isn’t much you need to do any differently. Store in an air-tight container for up to 3-5 days until ready to enjoy.

Prep Time: 5 Minutes • Cook Time: 0 Hours

The Skinny:
Servings: 2 • Serving Size: 1/2 Wrap • Calories: 299 • Fat: 22 g • Saturated Fat: 7 g • Carb: 14 g • Fiber: 1 g • Protein: 12 g • Sugar: 3 g • Sodium: 573 mg

Ingredients:
• 1 (100 Cal.) Sun-Dried Tomato Wrap Tortilla
• 1 Tbsp. Pesto
• 4 Slices (1 Oz.) Deli Sliced Chicken
• 1 Tbsp. Sun-Dried Tomato Pesto
• 2 Slices Low Sodium Center Cut Bacon
• 1 Oz. Fresh Mozzarella Cheese
• 1 C. Fresh Baby Spinach

Directions:
Lay out the sun-dried tomato wrap and spread 1 tbsp. of pesto over the top of it.

Place the 1 oz. sliced chicken over the pesto and top with the 1/2 Tbsp. sun-dried tomato pesto.

Layer with the 2 slices of bacon and 1 oz. fresh mozzarella cheese.

Top it all off with 1 c. baby spinach.

Roll it up from one end to the other, cut in half, and serve right away or store in an air-tight container in the fridge for 3-5 days.

Healthified 'Swamp' Soup

A long time ago in a galaxy far far away... whoops! Wrong story. Ahem. A long time ago, I made this heavenly soup for my family in the midst of winter and it was an instant hit! And it still is to this day. But, the post here needed some updating so here you go!

I've made the soup a few times over the years and each time seem to make it more and more my own. While the base of the soup remains the same, I've definitely built my own little swamp here.
