I don’t know. I felt like I wanted some buffalo chicken potato skins.

Easy to make shredded buffalo chicken that’s stuffed into potato skins and topped off with cheddar and blue cheese. Can’t go wrong there. Irish Braid Bread

With one of my favorite holidays coming up (St. Patrick’s Day) I thought it was about time to start rolling in a few fun takes on Irish dishes. One of our family favorite Irish bites has to be corned beef. It was actually one of the first meats that my picky-eater of a daughter would eat!

This Irish Braid Bread is sort of a take on an Irish infused Stromboli. It’s a croissant dough that’s wrapped (or braided) around corned beef, cooked spinach, red potatoes, and irish cheddar. No time to labor over the stove to make dinner? This Instant Pot Loaded Baked Potato Soup is quick and easy to make with almost all of the cook time being hands off in the instant pot. You start this soup off with cooking the bacon and then adding in the potatoes and broth to that. Yep, that’s right. The bacon is loaded into the soup from the very start!

Who says Fall has to be all about pumpkins anyway? Sweet potatoes deserve some love too! These Sweet Potato Biscuits are easy to make and just about as delicious as biscuits can get. They’re fluffy and light and the perfect addition to any Fall inspired meal, be it breakfast, brunch, or dinner! I topped mine with some apple butter and served them with fresh berries as breakfast, but they would be damn good with some gravy or served alongside a pot roast.

One Pot Irish Potato Leek Soup

It’s been pretty cold and yucky here for the past few days and a nice rich bowl of some potato soup just sounded like the absolute perfect thing for dinner. A few weeks back my brother tried his hand at making a potato leek soup for dinner, and while it was good, there were a few tweaks that I wanted to make. Having two cooks in one house is a blessing and a curse.
