Lemon Bar Cookie Cups

It’s Spring and that means its time for lemon bars and all things bright and light! These sweet little Lemon Bar Cookie Cups are the perfect individual lemon treat. They start out with a homemade cookie cup from scratch that’s somewhere between a sugar cookie and a short bread cookie. Then the sweet cups are filled with a homemade lemon curd that is super easy to make - and nearly fool proof too!

Now, I’ve made thumbprint lemon cookies before, but these cups take it a step further and give you a lot more cookie and lemon goodness, but the thumbprint version have their place too. Honestly these Lemon Bar Cookie Cups remind me of lemon pies too…

The weather here in Texas has been pretty amazing lately. Despite all the allergens and pollen in the air right now, the temperature is perfection. Everything is alive, plush, green, and coming back to life after a rather harsh winter. Whenever the weather starts to turn this amazing, I always start thinking about camping, even though I’m not the best camper.

What goes better with camping than S’mores? These S'more Cookie Cups are a definite upgrade from traditional s’mores though. They’re less messy and just as delicious! Plus, you can make up a whole batch of 24 of them all at once, rather than making one s’more at a time…

Funfetti Sugar Cookie Cake

My daughter’s birthday is literally just around the corner. I can’t believe I’m about to have an 11 year old. Even so, I’m doing my very best to take this birthday extra special since, well, times are still rather strange in the world. One of the things I’m doing to make her day even more magical is making cake! Okay, so… not cake-cake. She had pretty specific instructions on wanting a cookie cake again this year.
