Tofu & Green Onion Wontons + Chili Broth

Ever made homemade wontons before? You totally should! They’re a little time consuming, but they are super easy to make and delicious too. These Tofu & Green Onion Wontons are meatless and depending on the base of stock you choose for the Chili Broth, they might be completely vegetarian too! The chili broth here doesn’t mess around either. It has a real kick to it. So if you aren’t big on spicy things, you may want to use a plain broth or lessen the amount of spice in here.

The broth here isn’t meant to be a soup, but more of an additional coating of flavor for the wontons to get to roll around in. Trust me, you need the broth here as it really adds a whole lot to the dish! It’s spicy, tangy, and perfect to pair with the neutral wontons themselves…

Tofu Pad Thai

Pad Thai tends to be one of my favorite go-to asian themed dishes. I think it’s probably that way for a lot of people since it’s common, simple, delicious, and also tends to be one of the better-for-you options on a menu. I always like to take mine a step further when I can to get it meatless too.

Today I decided to make a take-out fake-out version of Tofu Pad Thai! It’s super quick and easy to make. Everything is put into one skillet for a quick toss and cook at the end. You could probably even get away with making most of the individual pieces ahead of time to have prepped and ready to heat up once ready for it at dinner time…

Hot & Sour Soup

I’ve gotten to where I make veggie sushi about once a week, or at least once every couple of weeks. This Hot & Sour Soup is an easy and delicious side to pair with the sushi. It’s super quick and easy to make all in one pot and it tastes even better than the one you order with take out. What’s even better is that you get to have control over just how hot or sour your soup is in the end.

I have seen a little difference in hot and soup soup out there. This one, to me, is more of a mixture between egg drop and hot and sour. I’m totally fine with that. I love egg drop soup as much as I do hot and sour. But, it is worth noting that you do DROP EGGS into this soup. It can be a scary thought, but I promise it’s easy peasy!…

Carrot Ginger Dressing

I’ve been playing around a lot lately with adding more and more vegetables to my meals and trying to do so in a sneaky and more clever way than just cooking them and plopping them on my plate. This Carrot Ginger Dressing is a fun asian twist on a vinaigrette.

I’m not quite sure how, but somehow the dressing ends up with an almost creamy texture. It’s light and bright and has just enough of a kick of ginger in there to keep you coming back for more. With it being so quick and easy to make that I’ll be using it this entire week for my lunches…

I love takeout food just as much as the next girl. But, I don’t like the way it makes me feel, how much it costs, nor the fact that I have no idea what’s actually in it or who’s prepared it. That’s why I LOVE to make takeout fake outs. This Egg Drop Soup is literally better than what you can get as takeout from just about anywhere.

One of the best parts is that this soup, as delicious as it is, only takes about 10 minutes to make from start to finish. And you have complete control over what’s going into it and how it’s seasoned. Plus, it’s a perfect low carb Asian style soup to pair up for an easy weeknight meal…
