It’s been a rough week! But, somehow 'I’m pressing on. This Overnight Strawberries & Cream French Toast Bake is not only easy to put together and delicious, but it’s also lightened up and is the perfect make ahead breakfast for a busy weekend. I’ve made a blueberry version of it before, but I decided to change it up a little bit this time and use up these big giant beautiful sweet strawberries that we have popping up ahead of Summer now.

Which let me just say, Summer cannot come quick enough! The strawberry farm that we like to go to is open right now and I think I’m going to have to make a trip out there to pick some of my own strawberries soon. But… back to he french toast bake!…

Spinach & Feta Bundt

I love to play around and shake things up a bit. And more often than not, we all think of a bundt pan as being used for something sweet. This time around I decided to use it for something savory. This Spinach & Feta Bundt could honestly fit into any meal space; breakfast, brunch, lunch, or dinner. And let me just say that this thing is absolutely bursting with flavor. It’s honestly one of the most delicious things I’ve eaten in a good long while.

It’s light, but still filling and has a richness to it with the feta cheese but also the lemon in there to cut through it. It’s really good stuff and it’s absolutely perfect for these few months of Spring. There’s just so much going on here that the only thing you’d really want to serve it with would maybe be a simple soup such as tomato soup!…

Hash Brown Sheet Pan Breakfast

Breakfast is probably my favorite meal of the day, so I’m always looking for inspiration and trying new things. I saw this idea for a sheet pan breakfast and just knew I was going to have to healthify it and give it a try! Boy, am I glad that I did. This Hash Brown Sheet Pan Breakfast is a super easy and delicious way to start the day.

The hash browns crisp up perfectly with the addition of the cheese on top. And then the bacon. …Did I mention the eggs? I would have liked my own yolks to have come out just a little more runny, but all in all I was super happy with the end result of this sheet pan breakfast!…

Spinach & Ravioli Bake

It’s cold and windy outside and I just want to curl up and be lazy. So, we’re having a super easy and lazy dinner tonight. It really doesn’t get more simple than this Spinach & Ravioli Bake with just 4 ingredients and hardly any hands on time! All you need for this one pan dinner is spaghetti sauce, ravioli, spinach, and cheese.

This recipe is also easily doubled for a larger family or group of people. And guess what? Even when you double it - it’s the same amount of easy peasy cheesy!…

Even though Halloween is over, pumpkin season is still upon us. And I love to find creative and fun uses for pumpkins in the kitchen all the way through Thanksgiving. It doesn’t get much simpler than biscuits and gravy, but here today we have biscuits and a homemade gravy. Now, I know what you’re thinking. Homemade gravy? That sounds hard! Actually - It’s totally not! It’s super easy to make and tastes GREAT. So ditch the prepackaged BS!

This gravy is made easily with breakfast sausage that’s cooked up, tossed with flour, and then brought to a simmer with some milk. Yep. That’s it. easy peasy, right? This ENTIRE recipe only needs 4 ingredients, plus salt and pepper…
