Baked Cheesy BBQ Chicken

Dinner truly doesn’t get more simple or easy than this Baked Cheesy BBQ Chicken. With just a handful of ingredients you can have the main part of dinner done and ready to go. It’s basic. Simple. Easy. And cheesy! To start this easy dinner off, you mix up some BBQ sauce with a little extra garlic goodness.

After that you marinate, if you have time, and then bake it until it’s almost done. It’s then topped off with cheese, red onion, and some pickled jalapeños to give just a little kick! Broccoli Cheese Twice Baked Potatoes

The russet potatoes are HUGE here right now and I love getting to play around with them to use them as more of a meal than a side, and the bigger ones allow me to do that more easily. I was also really vibing with broccoli and cheese so I thought I’d put the two together. These Broccoli Cheese Twice Baked Potatoes are so big that they could definitely be used as a meal in themself which is basically what I ended up doing.

They also can be made ahead of time and then put through the final bake when you’re ready to enjoy them. I had planned to end up with two servings, but they were so big that I opted to go with twice baked rather than just a loaded potato. Skinny Pumpkin Crunch Cake

Ahh, pumpkin crunch cake. You know the one. The one that's super easy to make and graces almost any dessert table during Halloween and Thanksgiving. Skinny Stuffed Mushrooms

I for one, love appetizers. I could make a meal alone out of small appetizers, both hot and cold. One of my favorites though, has to be stuffed mushrooms. My love of stuffed mushrooms goes back several years where I think my first try was at a little Italian restaurant.

Slow Cooker Lightened Up Baked Potato Soup

To celebrate this Winter season a bit more, I decided that even though it was still 70 degrees out, I was going to make some baked potato soup. Not just your average baked potato soup either. But the loaded kind. The kind that warms not only your stomach, but your heart too!

I've had a BUNCH of leftover potatoes from the holidays, and what better way to use those up than in a potato soup? For this soup, it really doesn't matter what kind of potato you use, but I went with russet. I kept the peels on about half of them and removed them from the other half. Breakfast Stuffed Pumpkin

Even though Halloween is over, pumpkin season is still upon us. And I love to find creative and fun uses for pumpkins in the kitchen all the way through Thanksgiving.
