I don’t know about anywhere else, but this week it is hot Hot HOT here in Austin, Texas. We’re talking triple digits as far as the eye can see. This means that my oven (and sometimes even my stove) are on lockdown. This means almost nothing is baked. The oven isn’t turned on for any reason.

That leads us into no heat and no bake recipes for the majority of our meals, snacks, and desserts. That’s where this Skinny No Bake Cheesecake. I’ve made a traditional style of cheese cake. I’ve made a dip version. I’ve even made one in the instant pot. Now? It’s time for a no bake cheesecake!…

No Bake Zombie Brain Cheesecake

Halloween dessert at it’s finest. This No Bake Zombie Brain Cheesecake will… take the cake! I used a plastic brain mold to make this no bake cheesecake extra spooky! With a little bit of green food coloring and some time chilling out, this dessert is perfect for Halloween vibes. I based this no bake cheesecake off of one that I made a while back, I just discarded the crust and formed it into a brain.

All in all this gooey green zombie brain is a great way to spook the kiddos and also get in good on the dessert! You can use cookies or sweet pita crisps to scoop up this cheesecake to enjoy. I also used some graham cracker crumbs around the dish to really get that cheesecake feel in there…

Remember those delicious no bake cookies from your childhood? I sure do! They were something that my mom and I would make on occasion, especially for sleep overs since they’re an easy and tasty recipe that kids can help make. …And getting to eat and enjoy the end result is always enticing!

Did I mention that it’s getting hot here in Texas and that these cookies requite NO BAKING? That’s right. Just a few minutes of the stove being on, but not the oven. Today it's going to be a whopping 107 in Austin, Texas! I'm at that point of summer where it's so hot that I nearly want it to be over, but I'm also not quite ready to end the freedom with the onslaught of another school year for my daughter.
