Skinny No Bake Cookies

Remember those delicious no bake cookies from your childhood? I sure do! They were something that my mom and I would make on occasion, especially for sleep overs since they’re an easy and tasty recipe that kids can help make. …And getting to eat and enjoy the end result is always enticing!

Did I mention that it’s getting hot here in Texas and that these cookies requite NO BAKING? That’s right. Just a few minutes of the stove being on, but not the oven. Another good thing about these cookies and the heat of summer is that you can store them in the fridge (or freezer) to have nice cold chewy cookies ready to snack on.

These cookies are lightened up in a super simple way, the sugar is swapped out for a natural sweetener. You could use any sort you want that measures cup for cup like sugar. I like granulated stevia and monk sweeteners personally.

Otherwise, these cookies are pretty straight forward and simple with only a handful of ingredients needed!

Skinny No Bake Cookies

The classic 'no bake cookies' from your childhood made just a bit better for you with a few simple swaps. Guilt free and just like you remember them!

Ingredients

  • 1/4 C. Butter, Cut into Cubes
  • 3/4 C. Natural Sweetener
  • 1/4 C. Sugar
  • 1/4 C. Unsweetened Almond Milk
  • 2 Tbsp. Unsweetened Cocoa Powder
  • 1/4 C. Creamy Peanut Butter
  • 1 Tsp. Vanilla Extract
  • 1/4 Tsp. Salt
  • 1 1/2 C. Quick Oats

Instructions

  1. Line two baking sheets with parchment paper or a silicone baking mat; set aside.
  2. Place the 1/4 C. butter, 3/4 C. Sweetener, 1/4 C. Sugar, 1/4 C. milk, and 2 Tbsp. cocoa powder in a medium saucepan.
  3. Bring the mixture to a boil over medium heat, stirring occasionally.
  4. Once the mixture is at a rolling boil, boil for one minute.
  5. Remove the pan from the heat and stir in the 1/4 C. peanut butter, 1 Tsp. vanilla, and 1/4 Tsp. salt.
  6. Add in the 1 1/2 C. oats.
  7. Drop 2 Tbsp. spoonfuls of the mixture onto the prepared baking sheets, and let sit at room temperature until cooled and hardened. (About 20 to 30 minutes.)
  8. Enjoy right away or store the cookies in an airtight container for up to 3 to 4 days on the counter or in the fridge.
