Skinny Greek 7 Layer Dip

I’ve been wanting to make a Greek version of a 7 layer dip for a while now and I finally got the chance today! The AC is being replaced and lets just say that with no AC and the heat index being well into the triple digits we needed something cool and light to munch on. That’s where this Greek 7 Layer Dip comes in.

Layer one is a seasoned cream cheese spread, layer two is hummus because hummus is yummus! For layer three you have zucchini (or cucumber), layer four is fresh diced tomato, with layer five comes some of my most favorite olives - kalamata. Towards the end is layer six with crumbled feta cheese, and finally layer seven is your sprinkling of green onions.

To lighten this dish up, all there was to do was to sub in a reduced fat cream cheese for regular and pick a hummus that had fewer calories than the others. Besides that, it’s already a pretty guilt free snack or appetizer that is absolutely perfect for sharing (or not!)

I scooped this dip up with pita chips and some cool crunchy celery, but you can really go with any veggie, chip, or cracker that you enjoy. Trust me, no matter how you dip or dunk it, you’re going to enjoy it.

A greek twist on a 7 layer dip! Cream cheese spread, hummus, fresh veggies, and a whole lot of flavor. Make ahead to enjoy and share!

Ingredients

  • 8 Oz. Neufachtel Cream Cheese
  • 1 Tbsp. Lemon Juice
  • 1 Tsp. Italian Seasoning
  • 2 Minced Garlic Coves
  • 1 C. Hummus
  • 3/4 C. Chopped Zucchini
  • 3/4 C. Diced Roma Tomato
  • 1/2 C. Sliced Kalamata Olives
  • 1/2 C. Crumbled Feta Cheese
  • 1/4 C. Chopped Green Onion

Instructions

  1. Beat together the 8 Oz. cream cheese, 1 Tbsp. lemon juice, 1 Tsp. Italian seasoning and 2 garlic cloves in a medium mixing bowl or the base of stand mixer until well combined.
  2. Spread the cream cheese mixture into a serving dish. Spread the 1 C. hummus on top of the cream cheese.
  3. Top with the 3/4 C. zucchini, 3/4 C. tomato, 1/2 C. olives, 1/2 C. feta, and 1/4 C. green onions.
  4. Cover and refrigerate for at least 2 hours and up to 12 hours before serving.
  5. Enjoy with pita chips or your choice of fresh veggies!
