Baked Buffalo Chicken Taquitos

It’s tailgating season and sometimes that means you need nothing more than some good buffalo chicken something or another. These Baked Buffalo Chicken Taquitos are loaded with nothing more than that. Buffalo chicken goodness warmed up with some cheese, hot wing sauce, and not much else.

I’ve made my fair share of buffalo chicken things in the past, but these taquitos have to be one of my favorite buffalo chicken bites. They’re super simple to make, and absolutely delish. Plus, you get to make them as mild or spicy as you want!

To keep them light, I used some low carb tortillas that were only 50 calories each. I also swapped in a reduced fat cream cheese, blue cheese dressing, and cheddar! Baking them was a good option too. They get nice and crisp on the edges and are warm and gooey on the inside.

As a side note, I may have rolled mine a little tight and during the baking process some of the filling came out so I just stuffed it back in. To avoid this, don’t roll the taquitos up super tight as they tend to shrink up a little bit when baked.

Baked Buffalo Chicken Taquitos

Baked Buffalo Chicken Taquitos

Crispy baked buffalo chicken filled taquitos that are quick and easy to make. Perfect as a part of dinner or to add to a game day spread!

Ingredients

  • 4 Oz. Neufchatel Cream Cheese
  • 1/3 C. Light Blue Cheese or Ranch Dressing (Mine is 20 cal.)
  • 1/4 C. Buffalo Sauce
  • 1 Boneless Skinless Chicken Breast, Cooked & Shredded
  • 1 1/2 C. Shredded Reduced Fat Cheddar
  • 8 Low Carb Tortillas (Mine were 50 cal each.)

Instructions

  1. Preheat the oven to 425 degrees F. and line a baking sheet with foil or a silicone baking mat; lightly coat it with non-stick spray and set aside.
  2. Mix together the 4 Oz. cream cheese, 1/3 C. dressing, and 1/4 C. buffalo sauce.
  3. Add in the 1 cooked chicken breast, and 1 1/2 C. cheddar.
  4. Lay out a tortilla and scoop about 1/4 C. of the chicken mixture into the tortilla and roll it up.
  5. Place it seam side down on the prepared baking sheet.
  6. Continue for each of the remaining tortillas.
  7. Give the taquitos a light spritz of non-stick spray and place in the oven to bake for about 25 minutes or until the edges of the tortilla are crisp and browning.
  8. Once done, remove from the oven and divide evenly among plates to enjoy!
