'Brain' Deviled Eggs

These deviled eggs are all dressed up for Halloween and ready to go with some pink hue to the filling and a fun little design on top that makes them look like mini brain bites. They’re lightened up, keto friendly, low carb, vegetarian, and gluten-free too! Which makes them even more fun for your Halloween eats and treats this year.

I finished them off with a light dusting of paprika to give just a little more of that creepy 'Halloween ‘brain’ feel. Other than that, these are very standard deviled eggs. Just, you know, guilt-free!

You can make these 'Brain' Deviled Eggs ahead of time by a couple of days, if you cover them and keep them in the fridge. They would be a fun addition to any Halloween spread or even as part of a spooky Halloween themed lunch box.

For under 50 calories in one deviled egg, you can enjoy these guilt-free while enjoying a more festive Halloween treat!

Lightened up deviled eggs that are dressed up for brains for Halloween! Pefect for a snack or spooky appetizer.

Prep Time: 10 Minutes • Cook Time: 0 Hours

The Skinny:
Servings: 12 • Serving Size: 1 Deviled Egg • Calories: 48 • Fat: 3 g • Saturated Fat: 1 g • Carb: 0 g • Fiber: 0 g • Protein: 4 g • Sugar: 0 g • Sodium: 76 mg

Ingredients:
• 6 Whole Large Eggs, Hard Boiled & Peeled
• 2 Tbsp. Light Mayonnaise
• 2 Tbsp. Plain Yogurt
• 1 Tsp. Yellow Mustard
• 1 Tsp. White Vinegar
• Paprika
• 1-3 Drops Pink Gel Food Coloring
• Salt & Pepper to Taste

Directions:
Half the hardboiled eggs and scoop out the yolks.

Place the yolks into a medium bowl and beat together with the 2 Tbsp. mayonnaise, 2 Tbsp. yogurt, 1 Tsp. mustard, 1 Tsp. vinegar, and a drop or two of pink food coloring. Season with salt & pepper to taste.

Transfer the mixture to a piping bag or a ziplock with the corner cut. Pipe the filling into the center of the deviled eggs and make a little ‘brain’ design.

Sprinkle a dash of paprika over the top.

Cover and place the fridge to chill for at least 30 minutes to enjoy!
