I would like to say that there’s something special I did here to make these Cherry Stuffed Blended & Baked Oats lightened up, but really the only thing was using an unsweetened almond milk. Outside of that, this recipe is super simple and packed with a lot of good things and cherries!

These are a great thing to make ahead and store in the fridge to have breakfast on hand and ready to reheat and eat with just a few minutes in the microwave.

Cherry Stuffed Blended & Baked Oats

Cherry Stuffed Blended & Baked Oats

These oats are a perfect combination of hearty oatmeal blended with sweet cherries and baked to perfection.

Ingredients

  • 1 C. Dry Uncooked Oats
  • 1 Tsp. Baking Soda
  • 1 Banana
  • 1/2 C. Unsweetened Almond Milk
  • 2 Tbsp. Natural Sweetener
  • 1 Tsp. Vanilla
  • 1/8 Tsp. Salt
  • 1/2 C. Cherry Pie Filling

Instructions

  1. Preheat the oven to 375 degrees F. and lightly coat the inside of two ramekins with non-stick baking spray; set aside.
  2. Add the 1 C. oats and 1 Tsp. baking soda to a blender or food processor and blend until more of a powder is created.
  3. Place the 1 banana, 1/2 C. milk, 2 Tbsp. natural sweetener, 1 Tsp. vanilla, and 1/8 tsp. salt in with the oat mixture and puree again.
  4. Divide half of the oat mixture evenly among the ramekins and top each with 1/4 C. cherry pie filling.
  5. Top with the remaining oat mixture and add a few additional cherries if desired.
  6. Place in the oven to bake for 25-30 minutes.
  7. Once done, remove from the oven and enjoy right away.
