Tomato Cobbler

April 13, 2015 Amanda Plott

I know what you're thinking. Tomato Cobbler?

Yes, and yes.

Lately, I've seen a lot of savory takes on treats that most would consider desserts or sweets. So, this is my savory take on a cobbler. I mean... a tomato is technically a fruit anyway. Right? Right!

"Knowledge is knowing a tomato is a fruit. Wisdom is not putting it into a fruit salad."

Well, at least I'm not putting the tomatoes into a fruit salad.

Tomatoes are one of my favorite things. I'm pretty sure there are not many circumstances to which I would turn one down. Pie, soup, ketchup, baked, raw, stuffed... I think I've had tomatoes in just about every manner in which you could eat possibly eat them...

Sun Butter, Banana & Chia Seed Toast

April 7, 2015 Amanda Plott

It's been a while since I posted a yummy breakfast toast, so I'm back at it again! After a rather long and exhaustive birthday weekend with my 5 year old, I needed something easy, healthy, and rather delicious to have for breakfast this week.

Happy 5th Birthday Lily!

I've done my share of toast in the past. Avocado toast. Black bean toast. Toast, toast, and now more toast! I wanted to do something a bit different, but still with the main focal point of... toast...

Baked Dark Chocolate Coffee Infused Donuts (Sponsored)

I'm the mother of a rather active almost five year old girl. (I mean... what little one isn't active, am I right?) Around here, mornings are always full of chaos and about 75% of the crazythat will go along with the day. It seems like everything is a struggle. Getting dressed, brushing teeth, brushing hair, everything. It's just an all out stressful situation!

Recently, I started in with a 'chore chart' that seems to make the mornings a bit easier. For each 'chore' she does on her own to get ready in the morning, she gets a star sticker. At the end of the week if she has accumulated enough stars, she gets a special treat or prize.

Another thing that helps with my morning routine is always starting my day off with a nice big cup of coffee. It's that morning pick-me-up that I absolutely need to get through it all. Yeah, you know what I'm talking about. Once I get my little one dressed and settled in (whether at home or pre-school), I like to indulge in a second cup of coffee for a bit of much needed "me time".

Today I'm using McCafé coffee in yet another way to help me get through my day while indulging in a better-for-you treat at the same time! After all, what goes better with coffee than donuts anyway? Now you can enjoy both together in one glorious bite...

Skinny Jalapeno Popper Dip (Sponsored)

Game day food is so important in my family, it's always been a big part of our traditions. In fact, cooking on game day was so important that when I was younger we even had a television set up on top of the fridge so that those preparing food could multi-task and watch the game at the same time!

One of the most famous game day eats in our house has always been jalapeño poppers. My dad makes some of the best, next to my own of course. Hah! But, I'm also a big BIG fan of dips and spreads! So, today I've decided to combine the two into one amazing lighter version of a jalapeño popper dip...

Skinny Crock Pot Coke Zero BBQ Pulled Chicken (Sponsored)

March 17, 2015 Amanda Plott

Here in Texas, we're extremely passionate about two things; BBQ and sports! What better than to bring the two together with your friends and family in a fun and creative way? Since my dad is a BBQ professional, I am all about making my own BBQ sauce. I've been known to make it with lots of interesting and sometimes rather uncommon things.

NCAA® March Madness is here and Coca-Cola is celebrating with new Coca-Cola NCAA® Final Four Packs that are available at Walmart. The four packs of cans come in three flavors; Coke Zero, Vanilla Coke and Cherry Coke. I know that when my friends and family get together to watch the games, we're all about home-gating with traditional drinks and 'game day' style foods that are easy to make, versatile, lean, and delicious!

After all, what's more 'game day' than BBQ and Coca-Cola?...

Whole Wheat Broccoli Rabe & Ricotta White Pizza

March 2, 2015 Amanda Plott

I haven't had broccoli too many times in my life. In fact, I could probably count on one hand the amount of times that I've eaten it. Now, that isn't to say that I don't like it. No, no, no. That isn't the case at all. It's just that rapini was never something that my parents cooked, so I guess it just never became a part of my personal food culture.

For a while now, I've been playing off and on with an raw food service that offers delivery of organic whole groceries directly from their farmers and/or local businesses to your house. Pretty nifty, right? Well, I always like to get their 'local box' which is loaded with different local seasonal produce each week. It's fun because I have gotten a lot of interesting new things to try. It's a fun little challenge for me as a home cook.

What can I say? I watch a lot of Chopped...
