Skinny Crock Pot Coke Zero BBQ Pulled Chicken (Sponsored)

Here in Texas, we're extremely passionate about two things; BBQ and sports! What better than to bring the two together with your friends and family in a fun and creative way? Since my dad is a BBQ professional, I am all about making my own BBQ sauce. I've been known to make it with lots of interesting and sometimes rather uncommon things.

NCAA® March Madness is here and Coca-Cola is celebrating with new Coca Cola NCAA® Final Four Packs available at Walmart. The Coca Cola NCAA® Final Four Packs available at Walmart come in three flavors; Coke Zero, Vanilla Coke and Cherry Coke. I know that when my friends and family get together to watch the games, we're all about home-gating with traditional drinks and 'game day' style foods that are easy to make, versatile, lean, and delicious!

After all, what's more 'game day' than BBQ and Coca-Cola?

To use up my Coke Zero from my Coca Cola NCAA® Final Four Packs available at Walmart, I decided it was high time that I made another creative BBQ sauce. A Coca-Cola BBQ sauce to be exact. I wanted to make the sauce super easy, just stir, heat, and eat; no chopping or dicing required!

After all, when you have guests over to watch the big games, who wants to spend all their time chopping things up in the kitchen? Not this girl! I want to spend my time watching my team and rooting them on with everyone else.

The Coca Cola NCAA® Final Four Packs available at Walmart is a great size for recipes like this one (since you only need 1 cup of soda), leaving enough left to share with friends and family. Plus, you can get and enjoy more than one flavor for a great price (4 packs for $5 or 2 packs for $3) at Walmart without having too many leftover after your game day events.

I love that I can whip up this BBQ sauce in no time flat (and even well ahead of the game) and then have the pulled chicken sit warmed in the crock pot as part of my game day spread. My guests can then enjoy eating at their leisure, whether it's atop a slider, in a taco, or as an open-face sammy!

Skinny Crock Pot Coke Zero BBQ Pulled Chicken

The Skinny:
Servings: 12 • Size: About 1/4 Cup Chicken + Sauce • Calories: 103.9 • Fat: 2.1 g • Carb: 8.4 g • Fiber: 1.1 g • Protein: 13.5 g • Sugar: 2.8 g • Sodium: 148.7 mg

Ingredients:
Skinny Coke Zero B.B.Q. Sauce:
1 C. 'No Salt Added' Tomato Sauce
1 C. Coke Zero
6 Oz. 'No Salt Added' Tomato Paste
2/3 C. Red Wine Vinegar
1/4 C. Dark Molasses (I used Blackstrap.)
2 Tsp. Liquid Smoke
1/2 Tsp. Paprika
1/2 Tsp. Garlic Powder
1/2 Tsp. Onion Powder
1/2 Tsp. Chili Powder
1/8 Tsp. Crushed Red Pepper Flakes
Salt & Pepper to Taste

1 1/2 Lbs. Boneless Skinless Chicken Breasts

Directions:

Mix all the sauce ingredients together into a medium bowl until well combined.

Pour 2 c. of the sauce into the bottom of a crock pot and add in the chicken.

I was able to find all the ingredients that I needed at my local Walmart. Coca Cola NCAA® Final Four Packs available at Walmart were up near the very front of the store, but their location may vary!

Cover and cook on high for 4-6 hours or on low for 6-8 hours.

While the chicken is cooking, and there's a commercial of some kind on, toss the remaining sauce into a small pot and bring it to a boil; stirring occasionally.

By the time the commercials are over, you can remove the sauce from the heat and set aside to cool.

Once it's cool you can transfer it to a container to set in the fridge until ready to use.

Once the chicken is done, remove the chicken from the sauce and shred.

You can do this using two forks against one another or using the bowl of a stand mixer with the paddle attachment.

Turn the crock pot off (or at least just onto warm) and transfer the shredded chicken back into the crock pot with the sauce it was cooked it and stir it all up.

Serve up the chicken in any way your little heart desires!

I served mine over some whole wheat multi-grain bread as an open-face sandwich with some mixed greens and a drizzle of the Coke Zero B.B.Q. Sauce with a side of baked beans and a little more lightly dress salad on the side.

This chicken would also be great served as BBQ sliders, tacos, or even BBQ chicken taquitos!
