Skinny Cinnamon Roll French Toast Bake

A few weeks back, my brother was showing me this awesome breakfast/dessert that he had come across. He must think it's fun to tag me in some of the most 'un-skinny' recipe ideas that he comes across. Hey, if he didn't razz me I would think he didn't care!

Anyway, the thing he showed me was an amazing cinnamon roll french toast bake that truly had nothing good in it. To be a little bit of a smarty myself, I decided I was going to take that amazing looking bake and turn it into something that was still drool worthy but, also wouldn't have me bolting out the door to the gym after indulging.

This New Year has gotten off to a great start around here, full of new friends, new family, and lots of fun. As always for the past few years, a better diet is always towards the top of my list. While I feel that I have a pretty good handle on that, there's always room for improvement and trying new things, of course!

Vegetable & Stars Soup

So, last week I was in the midst of what had to have been one of the worst colds of my life. I kid you not. This cold was fierce. It came with aches, the worst sinus pressure I've had, and was just all around bad news. Thankfully this week, I'm finally on the mend after the two week long fiasco. Unfortunately, it seems that my little princess has taken over where I left off.

Breakfast. ...The most important meal of the day, and for me, often the most overlooked one! Honestly, I have to sometimes trick myself or lure myself by way of new and interesting breakfasts just to get something in my stomach. Skinny Sugar Cookie Bites

If there's one thing that we all know and love, it's raw cookie dough. I know that when I was little, I must have eaten my weight in the stuff. And I couldn't even begin to tell you the amount of beaters that I licked or bowls that my mom let me scrape the remnants out of.

These days though, it's a whole other story. I rarely ever let my daughter 'lick the beaters', especially when there's raw egg involved. The thought of it just sends my head spinning. Thank goodness she doesn't like the texture of raw cookie dough or cake batter or I'd be in a lot more trouble!

Even so, every time that I make baked goods that childhood inclination comes creeping in.
