Talk about a twist on classics, y'all! Today I've combined two of my most favorite things together; spicy thai peanut dressing and burgers! I know it sounds crazy, but just hear me out. These burgers are wholesome, full of flavor, and so juicy. They are perfect for summer cookouts, being light enough not to weigh you down with any richness.

This is definitely a more refreshing burger with the cool crisp slaw, and yet is still filling enough to satisfy even the most empty of tummies. The secret? It's in the sauce! The peanut sauce that is. The Spicy Thai Peanut Sauce on this burger is what seals the deal for me. I like a good messy burger, especially when I'm entertaining!...

How to Cut a Watermelon (For a crowd!)

May 31, 2018 Amanda Plott

Hey! YOU. Yes, you! You've probably been cutting watermelon wrong for your whole life and didn't even know it.

So, you may not know it. But... I'm a room mom. That's right! I said it. I spend my fair share of time up at my daughter's school. Whether it's helping her teacher out, helping the school out, or planning and preparing things that go on behind the scenes. There's a wonderful group of us that have all become a lot closer this year and hopefully even more in the next to come!

Every year we have the dreaded end-of-the-year party. It's a pretty big deal. I mean... it's hot in Texas about this time of year. And the one fruit we like to serve up is watermelon. It's fresh, cold, and hydrating. Plus... almost every kid likes it. Win. Win…

It's the last week of school here for my little one and I am SO ready for summer, just like I know the rest of you are. I am ready to sleep in a bit in the mornings and take things slow for a little while. This end-of-the-year rush is no joke. My kid is exhausted. I'm exhausted. We're all exhausted. And that's why I'm sticking to quick and easy dinners right now.

These BBQ Pork Tenderloin Sliders are made in just at 30 minutes with the help of my electric pressure cooker and the quick pickled red onions on top are even easier! See? There is hope after all during this end of the year crunch time!…

Low-Carb Spinach & Mushroom Egg Bites (Keto-Friendly!)

May 26, 2018 Amanda Plott
spinach-mushroom-egg-bites11.jpg

I've been playing around with egg bites for a while now, and I've come up with a few fun flavors to change it up from week to week. Yes, homemade egg bites are generally in my personal regular rotation for one of my usual breakfast options. They are ridiculously easy to make, taste great, and are perfect for meal prepping. Did I mention they're also low-carb, gluten-free, and keto-friendly? Yep! All that too.

This time around, I decided to go with a spinach and mushroom style egg bite. To be honest, I wasn't too sure how well they would turn out since both spinach and mushrooms tend to have a pretty high amount of water in them. But, it ended up working out super well!…

Low-Carb Cauliflower Pizza Dip

May 24, 2018 Amanda Plott

Ever crave pizza but not all the guilt that goes along with it?

Yeah, me too!

I think though, that I may have finally found a way to sate that pizza urge without all the guilt to follow. This cauliflower pizza dip is low-carb, gluten-free, keto-friendly, and... wait for it... absolutely freaking amazing.

You can trust me when I say that no one who eats this dip will ever guess that it's better-for-you in any way, shape, or form. That's because it feels rich and decadent. It feels naughty. It feels so bad... but tastes so good…

Gluten-Free & Vegan Blueberry Peach Cobbler

May 22, 2018 Amanda Plott
blueberry-peach-cobbler7.jpg

It's about this time of year where my fridge is well stocked with fresh fruits and berries. Which is something I am not sad about. And there is little that tickles my pickle more than a homemade cobbler. So, when I got my hot little hands on local fresh blueberries and peaches, I knew it was high time to make a gluten-free and vegan version of a cobbler.

Being as cobbler is typically a fruit based dessert that's baked with a sweet 'crust' layer on top, how does one go about making it gluten-free or vegan? Well, to be honest, it's actually pretty easy! In fact, this has to be one of the most easy cobblers that I've ever made. And that's the truth of it…
