Whole Wheat Raspberry Oat Bars

I realized the other day that it has been a hot minute since I made any sort of bar recipe. I think the last one I made was a couple of years back and was a twist on a PB&J and was made around back-to-school time. Sooo I thought it was high time that I made some more bars. I’ve made blended oats in the past and they always turn out really well. Honestly, I’m not sure why I don’t make them more often than I do because they’re so simple, healthy, and easy to make. These Pineapple Upside-Down Blended & Baked Oats basically merge blended oats with a pineapple upside down cake. So you get to have your cake and eat it too.

2 Ingredient Cookies

I didn’t think it could be done, but yes - cookies can be made with a mere two ingredients. These 2 Ingredient Cookies are super east to make, because it’s just two ingredients, and they’re great as a snack, or even for part of a breakfast or lunch. So what are the two ingredients? Oats and banana. The oats do need to be quick oats and the banana has to be overly ripe. Other than that? There’s nothing more to them!

There aren’t any tricks to these cookies. They do end up being vegan, vegetarian, dairy-free, low fat, and bunch of other things that make them into not only one easy cookie, but a healthy one too.
