Sundays are for brunching, and this Sunday is no different. With knowing tomorrow is Monday, and that today was going to be a lazy day for the most part, I decided to go ahead and make breakfast yesterday. Well, what does that mean? Healthified Chicken Noodle Casserole

We’ve got just over two months of school left this year and I have to say… I’m chomping at the bit to get through with it. I’m in survival mode at this point to get through it and into the footloose and fancy-free days of Summer. However, I’m going to enjoy the tepid Spring weather and getting to use my stove while I still can.

With all of that in mind, now is the perfect time for easy-peasy weeknight dinners. And what’s more easy than a casserole? Or chicken noodle anything? Easy-peasy weeknight meals have been the name of the game lately. And for more than one reason too! With my house a little more full than usual, the last two and a half months of school upon us, and birthday season on the horizon… it’s all I can do to stay above water anymore! These Skinny Pesto & Ricotta Stuffed Shells are made with just a handful of ingredients and couldn’t be more easy to make.

Just because they’re simple, doesn’t mean they’re lacking flavor either. Oh-no. Not these shells. As we’re coming into Spring, we’re coming into fresh basil a plenty. Skinny Leftover Turkey & Mushroom Pot Pie

Can you believe it…? I STILL have meat in my freezer that’s leftover from Christmas, y’all! The turkey has now OFFICIALLY been all used up. (Though there is still plenty of ham socked away. - Someone buy me a deep freezer please and stop this madness!) With all this meat still taking over my freezer, I’m still working on coming up with delicious ways to use it all up.

So far… it’s been in a quiche, which is one of my favorite ways to use up leftovers. Another fun way is… pot pie! Even though I’m a southern girl, I don’t think I ever had a homemade pot pie. And now that I’m an adult and sticking with this healthier lifestyle, this Skinny Leftover Turkey & Mushroom Pot Pie is as close as we’re going to get!…

Western Omelette Crustless Quiche

Now that the holidays are coming to a close for the year, I know that we’ve all got our fair share of leftover turkey and/or ham in our freezers. This is one of my FAVORITE times of year for this VERY reason. And considering there was a little bit of a communication failure over Christmas Eve and Christmas dinner, I’ve ended up with a BUNCH of leftovers.

You don’t see me complaining about that though. I love to make leftover rewind recipes, especially with leftover holiday meats. It’s time to get cheesy! Cheese is, and always has been, my achilles’ heal. If there was one food that I could never manage to give up for just about any reason, it would be cheese. I even have a collection of recipes that is strictly devoted to cheesy eats and treats. Yep. My love for cheese goes far.

I’ve made healthier versions of actual ‘macaroni’ and cheese before, but I wanted to try something a little different since I had a giant spaghetti squash on hand that needed to be used up!
