Naked Beef Enchiladas

This certainly isn’t the first time that I’ve stripped my enchiladas down into their pure and naked forms. The last time I stuck with a veggie and cheese enchilada, but this time I wanted to make one that was more Tex-Mex inspired with a bunch of cheese and ground beef to pair with the staple red enchilada sauce.

Trust me when I say that you won’t miss the tortilla in these enchiladas. They are every bit as tasty and full of Tex-Mex flavor as any other enchilada you’ll come across. Plus, one of my favorite parts about these enchiladas is that you can make them well ahead of time to have prepared and ready to toss in the oven for dinner at a moments notice….

BLT Breakfast Bowl

Who doesn’t like a good BLT? Bacon makes just about everything better. Even breakfast! This Breakfast BLT Bowl is one of the quickest, easiest, and most delicious breakfasts that I’ve had in a while. Again, I’ve still got leftover eggs in my fridge (I’m down to just two now!) and I’m finding any excuse and way possible to use them up.

Being as I’m keeping things simple lately in the kitchen, and knowing how basic and easy a BLT is, I thought why not make a BLT into something for breakfast? And why stop there? Let’s turn it into a breakfast bowl at that!

Simple Wasa Cracker Snack

My fridge, just like most fridges right now, is stocked full of hard boiled bright colored eggs. And no matter how prepared any of us are for it… we always always have leftovers that we just don’t know what to do with. Banana nut bread has to be one of my most favorite things in the world to eat for breakfast. I honestly don’t make it enough, and haven’t made it in a good long while.
