English Muffin Loaf

A day late, but we’re going to blame it on the Holiday. Today I have for you, this English Muffin Loaf! It’s an english muffin in the form of a loaf of bread. It’s sliceable and yumable just the same as an english muffin, except you don’t have to tend to it like you would if you were making homemade english muffins.

The loaf is full of nooks and crannies just like a proper english muffin, and I really want to try to cut it in half lengthwise and make some sort of breakfast sandwich on the entire loaf. But, for now all we’re doing is the loaf itself…

Sheet Pan Tomato Soup

When it’s overcast and chilly outside, one of the first things that I start craving is tomato soup! This Sheet Pan Tomato Soup is about as easy as soup can get to make. You literally put everything on a baking sheet, roast it, and then puree it down into a soup. It’s that easy? Yes. Yes, it is exactly that easy. And on top of that this soup is super low calorie, vegetarian, vegan, gluten free, and tastes amazing.

With tomato soup being this easy to make, who needs the canned stuff? Not me! What’s better is that this soup is made with literally just a handful of ingredients. Just five main ones and then some seasoning. Tomatoes, onion, garlic, basil, and oil. That’s it!…

Skinny Cranberry Bliss Bars

Here’s another recipe from years back that needed an update in the looks department… but, not so much to the recipe itself! Here’s the original post below.

The madness is just about over here with the mass of holidays! Phew, thank goodness! I was happy to step back and have a few days to spend with my family, but now it's time to get back to work. Okay, so... here we go.

I've been wanting to make a skinny variation of the Cranberry Bliss Bar that they have Starbucks for a long long long time now. I have, in fact, had this recipe in my handy-dandy little note book for quite a while now (about two years actually) but for whatever reason it keeps getting pushed back each year.

Well, a few weeks before Christmas one of my aunts sent me a special request for a Skinny Cranberry Bliss Bar recipe. Skinny Creamy Jalapeño Ranch

This is another fun one that I absolutely had to update with some new pictures.

If you've ever been to Texas... you may have heard of a little place called Chuy's Mexican Restaurant. Mhn, the mere thought that place makes my mouth water. Seriously. They have some amazing Tex-mex. One of my most favorite things at Chuy's is their Creamy Jalapeño Ranch. It's something that they will serve along side chips, but... you have to ask for it! It's also used as a salad dressing option.

I've been trying for years now to find a recipe that's even remotely close to the infamous dip that Chuy's serves. There's a lot of options out there, but none of them can hold a candle to the original, especially when making any healthy substitutions…

Healthified Chicken & Mash Bowl

Okay, so there's this fried chicken chain restaurant that honestly I couldn't tell you the last time I ate at. They have these horribly amazing 'famous bowls' that I used to get back when I was younger and more naive when it came to food.

Fast-forward to today and I don't think that I could stomach sitting in that restaurants parking lot, much less eating anything that came out of it. Never mind that particular 'famous bowl' is nearly a whopping 800 calories and full of who-knows-what.

Vegetable Curry Laksa
