Green Goddess Zucchini Skillet
This vibrant skillet meal is a leafy, herby, zucchini-packed delight that combines the best of fresh veggies with tangy, creamy green goddess dressing—all without a drop of guilt.
Ingredients
- 1 Lb. Extra Lean Ground Beef
- 1 C. Diced Red Onion
- 8 Oz. Frozen Edamame
- 8 Oz. Broccoli Florets
- 2 Diced Zucchini
- 1 Tsp. Green Goddess Seasoning
- Salt & Pepper to Taste
- 1 Lemon, Juiced
- 1/2 Avocado Diced
- Drizzle Green Goddess Dressing
Instructions
- Lightly coat the inside of a large skillet with non-stick spray and cook the 1 Lb. beef and 1 C. diced red onion over a medium-high heat until the meat is browned and onion is tender.
- Add in the 8 Oz. Frozen Edamame, 8 Oz. Broccoli Florets, 2 Diced Zucchini, 1 Tsp. Green Goddess Seasoning, and Salt & Pepper to Taste.
- Cook until veggies are tender.
- Divide the meat and veggie mixture evenly among bowls and top with the 1 Lemon, 1/2 Avocado Diced divided evenly, and the Drizzle Green Goddess Dressing.
