This vibrant skillet meal is a leafy, herby, zucchini-packed delight that combines the best of fresh veggies with tangy, creamy green goddess dressing—all without a drop of guilt.

Ingredients

  • 1 Lb. Extra Lean Ground Beef
  • 1 C. Diced Red Onion
  • 8 Oz. Frozen Edamame
  • 8 Oz. Broccoli Florets
  • 2 Diced Zucchini
  • 1 Tsp. Green Goddess Seasoning
  • Salt & Pepper to Taste
  • 1 Lemon, Juiced
  • 1/2 Avocado Diced
  • Drizzle Green Goddess Dressing

Instructions

  1. Lightly coat the inside of a large skillet with non-stick spray and cook the 1 Lb. beef and 1 C. diced red onion over a medium-high heat until the meat is browned and onion is tender.
  2. Add in the 8 Oz. Frozen Edamame, 8 Oz. Broccoli Florets, 2 Diced Zucchini, 1 Tsp. Green Goddess Seasoning, and Salt & Pepper to Taste.
  3. Cook until veggies are tender.
  4. Divide the meat and veggie mixture evenly among bowls and top with the 1 Lemon, 1/2 Avocado Diced divided evenly, and the Drizzle Green Goddess Dressing.
  5. Enjoy right away!
