- 1 Bunch of Beets, Peeled & Cubed
- 2 Sweet Potatoes, Peeled & Cubed
- 1 Tbsp. Extra Virgin Olive Oil
- 1 Lemon Juiced
- 1 Tsp. Fresh Chopped Dill
- 1/2 Tsp. Garlic Powder
- Salt & Pepper to Taste
- 1/2 C. Plain Fat Free Greek Yogurt
- 1/4 Zucchini, Shredded & Squeezed Dry
- 1 Tbsp. Fresh Chopped Dill
- 1 Minced Garlic Clove
- Lemon Juiced
- Salt & Pepper to Taste
Instructions
- Preheat the oven to 375 degrees F. and line a baking sheet with foil or a non-stick baking mat.
- Toss the Cubed Bunch of Beets, cubed Sweet Potatoes, 1 Tbsp. Extra Virgin Olive Oil, 1 Lemon Juiced, 1 Tsp. Fresh Chopped Dill, 1/2 Tsp. Garlic Powder, and Salt & Pepper to Taste.
- Place the baking sheet into the oven to bake for 20 minutes.
- While the beets and sweet potatoes are cooking, mix together the 1/2 C. Plain Fat Free Greek Yogurt, 1/4 Zucchini Shredded, 1 Tbsp. Fresh Chopped Dill, 1 Minced Garlic Clove, Lemon Juice, and Salt & Pepper to Taste.
