A vibrant, nutrient-packed bowl of roasted goodness that brings together earthy beets, sweet caramelized sweet potatoes, and a fresh dressing that dances on your taste buds.

Ingredients

  • 1 Bunch of Beets, Peeled & Cubed
  • 2 Sweet Potatoes, Peeled & Cubed
  • 1 Tbsp. Extra Virgin Olive Oil
  • 1 Lemon Juiced
  • 1 Tsp. Fresh Chopped Dill
  • 1/2 Tsp. Garlic Powder
  • Salt & Pepper to Taste
Zucchini Dill Dressing
  • 1/2 C. Plain Fat Free Greek Yogurt
  • 1/4 Zucchini, Shredded & Squeezed Dry
  • 1 Tbsp. Fresh Chopped Dill
  • 1 Minced Garlic Clove
  • Lemon Juiced
  • Salt & Pepper to Taste

Instructions

  1. Preheat the oven to 375 degrees F. and line a baking sheet with foil or a non-stick baking mat.
  2. Toss the Cubed Bunch of Beets, cubed Sweet Potatoes, 1 Tbsp. Extra Virgin Olive Oil, 1 Lemon Juiced, 1 Tsp. Fresh Chopped Dill, 1/2 Tsp. Garlic Powder, and Salt & Pepper to Taste.
  3. Place the baking sheet into the oven to bake for 20 minutes.
  4. While the beets and sweet potatoes are cooking, mix together the 1/2 C. Plain Fat Free Greek Yogurt, 1/4 Zucchini Shredded, 1 Tbsp. Fresh Chopped Dill, 1 Minced Garlic Clove, Lemon Juice, and Salt & Pepper to Taste.
  5. Once the sweet potatoes and beets are done, remove from the oven.
  6. Line plates with the Zucchini Dill Dressing divided evenly and then top with the beets and sweet potatoes. Enjoy right away!
