Cowboy Cornbread Casserole

Ingredients
- 1 White Onion, Chopped
- 1 Bell Pepper, Chopped
- 1 Lb. Extra Lean Ground Beef
- 1/2 Tsp. Minced Garlic
- 1/2 Tsp. Paprika
- 1 (10.5 Oz.) Can Cream of Chicken
- 1 (10 Oz.) Can No Salt Added Rotel
- 1/3 C. Plain Fat Free Greek Yogurt
- 2 C. Shredded Cheddar
- 2 (8.5 Oz) Boxes Cornbread Mix
- 1 (14.5 Oz.) Can Creamed Corn
- 1/2 C. Fat Free Milk
- 2 Whole Large Eggs
Instructions
- Preheat the oven to 350 degrees F and lightly coat a 9x13" baking dish with non-stick spray and set aside.
- In a large skillet over medium high heat, add the 1 White Onion and1 Bell Pepper, Chopped to the pan, cooking for 2-3 minutes or until softening.
- Add the 1 Lb. Extra Lean Ground Beef to the skillet, along with the 1/2 Tsp. Minced Garlic and 1/2 Tsp. Paprika.
- Continue cooking until the beef is fully cooked.
- Stir in the 1 (10.5 Oz.) Can Cream of Chicken, 1 (10 Oz.) Can No Salt Added Rotel, 1/3 C. Plain Fat Free Greek Yogurt and 1 cup of the Shredded Cheddar, gently combining until all ingredients are just combined.
- Meanwhile, in a large mixing bowl, add 2 (8.5 Oz) Boxes Cornbread Mix, 1 (14.5 Oz.) Can Creamed Corn, 1/2 C. Fat Free Milk, and 2 Whole Large Eggs. Stir until just combined.
- Spread the cornbread batter evenly into the prepared baking pan.
- Top with the ground beef mixture, but don’t mix it in; sprinkle the remaining Shredded Cheddar evenly over the top of the meat mixture.
- Bake, uncovered, on the center oven rack, for 30-35 minutes and a knife inserted into the cornbread comes out clean.
