Chicken Pot Pie Tater Tot Casserole

I’m shaking dinner up over here with this Chicken Pot Pie Tater Tot Casserole! It’s a fun take on a chicken pot pie that uses tater tots in place of any kind of pie dough. It’s a perfect dinner for any weeknight and can mostly be made ahead of time and stored in the fridge until you’re ready to top it with tots and bake! Because who doesn’t like tater tots?

The tater tots make this pot pie extra kid friendly. And honestly? Extra delicious too! Plus, there’s plenty of veggies in there; carrots, peas, onion, and some celery too. That means this pot pie is an all in one dish. A meal in a bowl.

This is a pretty easy dish to make too, and in fact, easier than most other pot pies since you don’t have to fuss around with a pie dough. Just cook up the filling and toss the tater tots on top. If you really wanted to round this dish out as a full meal, it would be great served with a small side salad, but honestly I didn’t find it needed.

The Chicken Pot Pie Tater Tot Casserole was filling enough all on it’s own.

A chicken pot pie that's been stripped of it's pie crust and uses tater tots instead! A delicious and kid-friendly way to enjoy pot pie!

Ingredients

  • 2 Tbsp. Butter
  • 1/2 Yellow Onion, Diced
  • 2 Celery Stalks, Diced
  • 2 Carrots, Diced
  • 2 Garlic Cloves, Minced
  • 3 Tbsp. Flour
  • 1 1/2 C. Unsalted Chicken Stock
  • 1 1/4 C. Unsweetened Almond Milk
  • 3/4 Tsp. Seasoning
  • 1 C. Frozen Peas
  • 1 Lb. Boneless Skinless Chicken Breast, Cooked & Shredded
  • 16 Oz. Frozen Tater Tots

Instructions

  1. Place the 2 Tbsp. butter in the bottom of a large skillet.
  2. Add in the 1/2 yellow onion, 2 chopped celery stalks, and 2 chopped carrots and cook for 5-7 minutes or until tender.
  3. Add the 2 minced garlic cloves and cook for another minute or so.
  4. Preheat the oven to 400 degrees F.
  5. Sprinkle the 3 Tbsp. flour over the veggies and stir, allowing to cook for about a minute.
  6. Slowly whisk in the 1 1/2 C. chicken stock, and 1 1/2 milk and bring it to a simmer to cook for about 5 minutes or until thickened.
  7. Stir in the 3/4 Tsp. seasoning and season with salt and pepper to taste.
  8. Add in the 1 C. peas and cooked chicken; stir to combine.
  9. Transfer the mixture to a 9x9" or 8x8" baking dish and top with the 16 Oz. tater tots.
  10. Place it in the oven to bake for 40-45 minutes or until hot and bubbling.
  11. Once done, remove from the oven and enjoy right away!
