Lemon Bar Cookie Cups

It’s Spring and that means its time for lemon bars and all things bright and light! These sweet little Lemon Bar Cookie Cups are the perfect individual lemon treat. They start out with a homemade cookie cup from scratch that’s somewhere between a sugar cookie and a short bread cookie. Then the sweet cups are filled with a homemade lemon curd that is super easy to make - and nearly fool proof too!

Now, I’ve made thumbprint lemon cookies before, but these cups take it a step further and give you a lot more cookie and lemon goodness, but the thumbprint version have their place too. Honestly these Lemon Bar Cookie Cups remind me of lemon pies too…

Very Cherry Pie

You know, I haven’t actually ever made pie dough for a pie before. I’ve made something akin to pie dough for other eats and treats before, but I’ve never made pie dough for a pie before. I saw an idea for a strawberry infused pie dough a long while back now, and it’s sort of stuck with me. So when I decided to try my hand at a homemade cherry pie filling, I thought what the hell! I may as well make the pie dough myself and try to infuse it with some cherry goodness too!

So here we have it! THis Very Cherry Pie! It’s got cherries all the way through the filling and into the pie crust. And can I just say, this pie is actually pretty easy to make! You would think making the crust and the filling would be complicated, but it’s honestly not much more work than pre-made dough and canned filling…

Crazy Crust Cherry Pie

Some days are just meant to be lazy, and this is just one of those days. There’s another cold front blowing in right now as we roll into Spring break over here. How crazy is that?! Okay, well it’s crazy by Texas standards anyway. Even so, a cherry pie just sounded good to me and I didn’t want to fuss with a pie dough this time around. So here we are with this Crazy Crust Cherry Pie!

What’s a Crazy Crust Cherry Pie? It’s a one bowl cherry pie where the crust is more cake like and is whipped up in no time at all in one bowl before being poured into a pie dish ahead of cherry pie filling. I’d venture to say that this pie is somewhere in between a cobbler and a pie though since the crust itself isn’t really indicative of a pie dough….

Pink Velvet Waffles & Cream Cheese Drizzle

Valentine’s day is coming and that always puts me in the mood for sweets. Being as my daughter is pretty much in love with waffles, I decided to try my hand at making some pink velvet waffles! What are pink velvet waffles? Well, they’re basically a pink version of red velvet that’s made with just a touch of cocoa powder and lighter colors to be pink rather than full on red!

Being as they are pink velvet waffles, I opted to make a cream cheese drizzle in place of syrup to go along with these sweeties. And of course, no waffle can go eaten in this house unless it has sprinkles on top. So, these pretty pink sprinkles were the perfect addition…

I’m no stranger to cheesecakes in the instant pot, and so far they’ve all worked out really well. So, I thought I would try my hand at making one of my favorite cheesecakes in the pressure cooker. After all, what’s better than rainbow sprinkles in your cheesecake?

This cheesecake recipe is super simple and is pretty much fool proof too. And trust me, I know cheesecakes can be tricky and finicky at best. But, this one isn’t - I promise! Birthday Cake 'Cake Batter' Waffles

To say that these waffles were a hit this week would be a vast understatement. I had originally made these waffles some years ago and just this week decided that it was high time to revisit them with my new waffle maker, and I was not disappointed - and neither was my daughter. She’s been a bit of a waffle fiend lately, and being as she’s one of the most picky eaters I’ve ever known, I was a little concerned that she would turn her nose up at these. But, she didn’t!

These waffles turn out light and fluffy and perfectly soft. The batter makes quite a few waffles, even with using a full cup of batter for these with my giant Belgian waffles, I got 7 of these bad boys…
