I've made a LOT of birthday style eats and treats before. What can I say? My kiddo and I love rainbows and sprinkles. And there's no time like the month of June to bust our the rainbow sprinkles and cake flavored amazingness. It’s pride month AND we I have a lot of family birthdays this month too! This is an older recipe, so I decide to go back and revisit it.

Originally I found the idea for these cookies and they looked amazing, but as most of you know I can't help but tinker around and put my 'skinny' spin on everything…

Birthday Cake 'Cake Batter' Waffles

To say that these waffles were a hit this week would be a vast understatement. I had originally made these waffles some years ago and just this week decided that it was high time to revisit them with my new waffle maker, and I was not disappointed - and neither was my daughter. She’s been a bit of a waffle fiend lately, and being as she’s one of the most picky eaters I’ve ever known, I was a little concerned that she would turn her nose up at these. But, she didn’t!

These waffles turn out light and fluffy and perfectly soft. The batter makes quite a few waffles, even with using a full cup of batter for these with my giant Belgian waffles, I got 7 of these bad boys…

Skinny Baked Funfetti 'Cake Batter' Oatmeal

Back when I originally made this, my amazing little girl wass turning 4 years old the very next day and I could hardly believe how fast time was flying! Today, she’s a month into 10! One of her most favorite things in the world when she was little (and still is today) are sprinkles. Every year for her birthday I always try to come up with a 'sprinkle' heavy (funfetti) dish in her honor.

Well, alright... so funfetti and sprinkles are a few of my most favorite things in the world as well. I mean... what's better than eating a rainbow? I like to imagine that it appeases my inner child for a while…

Skinny Birthday Cake Cinnamon Rolls

When I originally made these Skinny Birthday Cake Cinnamon Rolls it was for my daughter’s third birthday. Today we are just about a week and a half away from her turning ten! Happy early birthday Lily!

In honor of my sweet princess, I decided to whip up another batch of special homemade cinnamon rolls, and in the process, give the images a bit of a facelift. The recipe has remained the same because it’s just that damn good. Tried and true, it has held strong through the years. Okay all, this is going to be my last birthday cake inspired recipe for the week! This birthday bonanza was all in honor of my little girl's birthday, which officially kicks off birthday season for my family. I'm working on Game Day recipes this week in preparation for Super Bowl! I'm not a big football fan, but I do love the food and the commercials - so bring it on!

If you can't tell by now, I'm a bit of a homebody. I've found that it's either far too hot to go outside and do anything worth enjoying or it's just too cold. There's probably three months of the year here in Texas that I find tolerable to venture outdoors for longer than a few hours in.

That being said... I love, love, love to homegate! What's homegating? That's where you 'tailgate' from the comforts of your own home. And... if you don't know what tailgating is - well then you probably wouldn't be looking up game day food to begin with, hah!...
