Skinny Baked Funfetti 'Cake Batter' Oatmeal

Back when I originally made this, my amazing little girl wass turning 4 years old the very next day and I could hardly believe how fast time was flying! Today, she’s a month into 10! One of her most favorite things in the world when she was little (and still is today) are sprinkles. Every year for her birthday I always try to come up with a 'sprinkle' heavy (funfetti) dish in her honor.

Well, alright... so funfetti and sprinkles are a few of my most favorite things in the world as well. I mean... what's better than eating a rainbow? I like to imagine that it appeases my inner child for a while.

One thing my little love doesn't like is oatmeal in any form or fashion. Not even as a granola bar. So, I had the notion that perhaps if I added a ton of sprinkles to some oatmeal... she might be a little more receptive to the blissful breakfast treat that I am so fond of.

Much to my dismay, she didn't find this birthday oatmeal to be humorous or appealing. The others in the house here found the oatmeal to be quite delightful; a bowl full of happy!

Yum! Look at all that baked oatmeal and sprinkle goodness.

Just as the child has changed in the past 6 years, so has this recipe! I’ve altered it and changed it up to better reflect my current, and more knowledgable, tastes in food.

A delicious birthday 'funfetti' inspired baked oatmeal that everyone is SURE to love. Pretty, colorful, and easy to make! Perfect for a weekend breakfast.

Prep Time: 10 Minutes • Cook Time: 40 Minutes

The Skinny:
Servings: 9 • Serving Size: 1 Square • Calories: 317 • Fat: 15 g • Saturated Fat: 8 g • Carb: 43 g • Fiber: 4 g • Protein: 8 g • Sugar: 0 g • Sodium: 255 mg

Ingredients:
• 1 C. Unsweetened Almond Milk
• 1/2 C. Butter, Softened
• 2 Whole Large Eggs
• 1/4 C. Brown Sugar/Stevia Blend
• 1 1/2 Tsp. Vanilla Extract
• 1 Tsp. Ground Cinnamon
• 1/4 Tsp. Salt
• 2 C. Oats
• 1 C. Funfetti Cake Mix
• 1 1/2 Tsp. Baking Powder
• Rainbow 'Jimmies' Sprinkles

Directions:
Lightly coat the inside of an 8x8” or 9x9” baking dish with non-stick baking spray; set aside.

Whisk the 1 C. almond milk, 1/2 C. butter, 2 eggs, 1/4 C. brown sugar blend, 1 1/2 Tsp. vanilla, 1 Tsp. cinnamon, and 1/4 Tsp. salt together in a large bowl until well combined.

Add in the 2 C. oats, 1 C. cake mix, and 1 1/2 Tsp. baking powder. Stir until just combined.

Fold in any additional rainbow sprinkles at this time. I added about 1/4 C. rainbow ‘jimmies’ to mine.

Pour the oat mixture into the prepared baking dish.

I like to prepare to this point and then let mine sit overnight in the fridge, letting the oats soak up all of the milk and flavor. I just remove the dish in the morning and continue on with the directions as listed below.

Once ready to bake, preheat the oven to 350 degrees F. and place in the oven to bake for 40-45 minutes.

Remove the dish from the oven and allow to cool slightly.

Cut into 9 equal pieces and serve warm!

I like to top with milk or more vanilla greek yogurt and sprinkles!

Note: You can cover and store leftovers in the fridge for 2-3 days, but the sprinkles may begin to 'melt' slightly and not look quite as pretty.
